在北京人的早點里邊，小籠包是占有一席之地的，小小軟軟的包子差不多能做到一口一個，湯汁豐盈的肉餡兒跟面能很好地融合在一起，透過包子皮就能若隱若現的看到湯汁……特別好吃，周末放假全家人都在一起吃早餐的時候，爸爸有時候會出去買早點，兒子總是會點一籠小籠包，隨著北京的天氣越來越冷，爸爸也不愿意早上出門了，兒子說想吃小籠包，那就到了媽媽大顯身手的時候了，既然誰都不愿意出去買，那就自己動手做吧，拿出我30年霍霍面粉的經驗，真就輕松復刻了外面早點攤兒的小籠包，外形相似度達到95%，味道還原度也能達到95%，老公跟兒子都說相當相當好吃，我自己覺得能做成這樣已經很難得了，所以今天特地把配方和做法拿出來跟大家分享，如果你也一樣喜歡吃小籠包，那不妨自己試試看，萬一成功了，今后就不用冒著寒冷的天氣出去買包子了。

用料

面團：中筋面粉

200克

酵母粉

2克

白糖

3克

溫水

150克

餡料：肉餡兒

250克

大蔥碎

適量

適量

十三香

適量

姜粉

適量

適量

生抽

2勺

蠔油

1勺

老抽

1勺

軟面透油小籠包成功復刻??無需手揉面，香香軟軟巨好吃，早餐好選擇的做法步驟

步驟 1

先來制作餡料，鍋開大火，倒入適量食用油，燒熱后倒入三分之一的肉餡兒炒散，加入一半大蔥碎炒勻關火，趁熱加入生抽，老抽，蠔油，十三香，姜粉，鹽等調料炒勻 等到鍋中肉餡兒溫度下降，加入剩余的三分之二的生肉餡兒，攪拌均勻即可，餡料就制作好了，做好的餡料放冰箱冷藏備用

步驟 2

來和面，面粉中加入白糖和酵母粉攪拌均勻，加入溫水，邊倒邊用筷子攪拌，不停攪拌至沒有干粉，面團很軟很粘，用手蘸水把面團拍實，放在溫暖的地方發酵至兩倍大 發酵好的面團中間充滿氣孔，用筷子充分攪拌排氣，在表面撒一大把干面粉，就能用了

步驟 3

從冰箱里取出餡料，加入剩余的一半大蔥碎攪拌均勻，冷藏后的餡料很硬實，好包

用手揪一小塊面蘸一圈表面的干面粉就很好操作了，壓扁，包入適量肉餡兒，捏緊收口，全部包好，擺入蒸屜

步驟 5

鍋中加入適量清水，把蒸屜擺入鍋中，就是之前炒餡兒用的的快涮鍋，自帶的蒸屜
