第五名：西蘭花

推薦吃法，蒜蓉西蘭花。這道菜幾分鐘就能搞定，既解饞又健康，蒜香濃郁，清脆爽口。

食材：西蘭花1顆，大蒜：5~6瓣（蒜多才香！）食用油、鹽、蠔油（可選）、水淀粉（可選）

做法：1處理西蘭花（關鍵一步）把西蘭花切成小朵，放入盆中，加入一勺鹽和少許面粉，用清水浸泡10分鐘。這樣能把藏在縫隙里的小蟲子和雜質徹底泡出來，然后再沖洗干凈瀝干備用。

2. 焯水保持翠綠鍋中燒開水，水開后加入一小勺鹽和幾滴食用油（這是西蘭花保持翠綠的秘訣）。倒入西蘭花，大火焯燙1分鐘左右即可撈出。千萬不要煮太久，否則口感就不脆了。撈出后最好過一下涼水，這樣口感更爽脆。

3. 爆香蒜末，把大蒜拍扁切成細膩的蒜末。鍋里倒適量油，油溫五成熱時，轉小火，先倒入一半的蒜末，慢慢煸炒出濃郁的蒜香味（注意別炒糊了）。

4. 快速翻炒倒入瀝干水分的西蘭花，轉大火快速翻炒。加入適量的鹽和少許蠔油提鮮，翻炒均勻讓西蘭花入味。

5. 出鍋前注入靈魂，臨出鍋前，把剩下的一半生蒜末倒進去，再簡單翻拌幾下立刻關火裝盤。這一步叫“金銀蒜”，能讓蒜香味更有層次感，味道絕了！

第4名：豆芽

推薦吃法，酸辣綠豆芽。這道菜絕對是米飯殺手！不僅便宜，而且吃起來清脆爽口、特別開胃。

食材：綠豆芽：300~400克，干紅辣椒：5~8個（根據(jù)吃辣程度調(diào)整）花椒：一小把（靈魂香料，不建議省）大蒜：2瓣切片生姜：2片切絲，食用油、生抽、香醋（或陳醋）、鹽、白糖、雞精（可選）

做法：1清洗控水

（關鍵）：綠豆芽摘洗干凈，瀝干水分備用。如果家里有漏勺，建議提前把豆芽放在漏勺里，這樣下鍋時能迅速倒入，動作更利索。

2爆香底料：鍋燒熱后倒適量食用油，油溫五成熱時轉小火，放入花椒、干辣椒段、蒜片和姜絲，慢慢煸炒出濃郁的香辣味。

3大火快炒：倒入綠豆芽，立刻轉最大火快速翻炒。沿著鍋邊淋入一勺生抽和一勺香醋，繼續(xù)大火猛翻。

4調(diào)味出鍋：豆芽稍微變軟（大約翻炒1分鐘左右），加入少許鹽和一點點白糖提鮮（白糖能中和過度的酸味）。再次快速翻炒均勻，大概十幾秒后即可關火裝盤。

第3名：西紅柿

推薦吃法，西紅柿燉牛腩。燉煮能讓番茄紅素充分釋放，不僅營養(yǎng)更好吸收，而且酸甜濃郁的湯汁拌飯簡直是一絕。做好的美食，酸甜開胃，牛肉軟糯，這道菜端上桌絕對連湯汁都不剩！

食材：牛腩，西紅柿：3~4個，洋蔥半個、生姜幾片、大蔥一段，八角1個、香葉2片、桂皮一小塊（香料不宜多，以免搶了番茄的鮮味），食用油、生抽、老抽、料酒、冰糖、鹽、番茄醬（秘密武器）

做法：1牛腩焯水去腥，把牛腩切成麻將大小的方塊，冷水下鍋。放入幾片姜和一勺料酒，大火煮開后撇去浮沫，撈出用溫水沖洗干凈，瀝干備用。（注意用溫水洗，冷水會讓熱牛肉收縮變柴）。

2處理西紅柿（分兩次放），這是湯汁濃郁的關鍵！把西紅柿頂端劃十字，用開水燙一下去皮（嫌麻煩也可以不去），然后切成小塊。把它們分成兩份：一份切碎一點，一份切大塊。

3 炒糖色與底料，鍋里倒少許油，放入幾顆冰糖小火炒出焦糖色（或者直接下一步省略炒糖色），倒入瀝干的牛腩塊，中火煸炒至表面微微焦黃，逼出多余的牛油。接著加入蔥姜、八角、香葉、桂皮炒出香味，淋入1勺料酒、2勺生抽、半勺老抽翻炒均勻上色。

4第一次放西紅柿（熬湯底），把切碎的那份西紅柿倒進鍋里，和牛腩一起翻炒。多炒一會兒，邊炒邊按壓，直到西紅柿完全軟爛成泥，炒出紅紅的湯汁。這時候可以加一勺番茄醬，能讓湯色更紅亮，味道更濃郁。

5.慢燉入味，往鍋里加入足量的開水（一定要沒過食材，中途盡量別加水），大火燒開后轉小火，蓋上鍋蓋慢燉 1到1.5個小時，直到牛腩變得軟爛。

6第二次放西紅柿（增加口感），當牛腩燉得差不多時，把剩下的大塊西紅柿倒進去，同時加入適量的鹽調(diào)味。繼續(xù)蓋蓋燉煮10~15分鐘。這樣既能保留西紅柿的果肉口感，又能讓湯里充滿新鮮的果香。

7大火收汁，最后嘗一下咸淡，如果湯汁還比較多，可以開大火稍微收一下汁（不用收太干，留點湯拌飯是靈魂！），撒上一把蔥花或香菜即可出鍋。

第2名：紅薯

推薦吃法，紅薯南瓜小米粥。紅薯的溫柔打開方式！南瓜和小米也是養(yǎng)胃的黃金搭檔，三者搭配在一起，不僅顏色金黃誘人，口感更是香甜順滑。

食材：小米，紅薯：1個，南瓜，枸杞

做法；1. 處理食材，小米用清水輕輕淘洗1~2遍即可，千萬不要用力搓洗，否則表面的營養(yǎng)物質會流失。把紅薯和南瓜去皮，切成滾刀塊或者稍微小一點的丁（切小一點更容易煮爛，口感更綿密）。

2. 開水下鍋（關鍵一步），砂鍋或湯鍋中加入足量的清水，大火燒開。水開后再倒入小米。這樣不僅能防止小米糊底，而且更容易煮出厚厚的米油。

3. 放入粗糧同煮，再次煮沸后，把切好的紅薯塊和南瓜塊放進去。用勺子攪拌一下，防止粘鍋。

4. 文火慢熬，轉中小火，蓋上鍋蓋留一條小縫（防止溢鍋），慢慢熬煮 20~30分鐘。期間記得偶爾用勺子順著一個方向攪動幾下，這樣能讓粥的口感更加粘稠順滑。

5. 點綴出鍋，看到小米開花、湯汁變得濃稠，紅薯和南瓜用勺子一壓就成泥的狀態(tài)時，撒入洗凈的枸杞，再煮個1~2分鐘就可以關火了。關火后可以燜5分鐘，米油會更豐富。

第1名：大蒜

推薦吃法，臘八蒜。一年四季都能隨時做出來，做好的美食通體碧綠、酸辣脆爽，看著就讓人食欲大開。

食材：紫皮大蒜，釀造米醋，冰糖，密封玻璃罐

做法：1剝蒜處理：把大蒜剝?nèi)ネ馄ぃ械舻撞枯^硬的根須（這樣醋更容易滲入）。挑出有傷痕或發(fā)軟的壞蒜瓣，只留飽滿結實的。全程不需要水洗，如果實在覺得臟，洗完后必須徹底晾干表面的生水。

2裝罐：將蒜瓣放入干凈無油的玻璃罐中，如果喜歡酸甜口，可以按照“一層蒜、一層冰糖”的方式鋪好。

3倒醋：倒入米醋，醋的量一定要完全沒過所有蒜瓣。
