在很長(zhǎng)的歲月里，農(nóng)村幾乎家家戶戶都會(huì)留出圈欄養(yǎng)上一兩頭土豬，就像我們圖片里這頭一樣，吃著家里的剩菜剩飯、米糠番薯、收割后余下的糧食粗糧，慢騰騰長(zhǎng)足一整年，長(zhǎng)到二三百斤沉，年底出圈的時(shí)候，要么換一家人一整年的零用開支，好比過去說的“賣了豬就能換電視機(jī)、娶媳婦”，就是刨去豬仔成本，剩下的全是實(shí)打?qū)嵉募兪杖耄灰匆坏稓⒘耍殖鰜?lái)的肉凍在院子里，夠一大家子吃一整個(gè)冬天，等兒孫過年回家，端上桌的紅燒肉就是最香的年味。

就像開化建群村的老人說的，現(xiàn)在養(yǎng)土豬的大多是留守的長(zhǎng)輩，養(yǎng)一頭豬，盼的就是孩子回家能吃上一口純正的肉香——外頭買的飼料豬，怎么也燉不出家里這個(gè)味兒。為什么土豬肉，成了現(xiàn)在的“香餑餑”？這些年越來(lái)越多人念著土豬肉的好，不是沒有道理：生長(zhǎng)周期足夠，口感遠(yuǎn)勝速養(yǎng)豬：傳統(tǒng)土豬不催肥，養(yǎng)足一年甚至更久才出欄，肌間脂肪沉淀充足，吃起來(lái)就是香而不膩，不管是紅燒還是清燉，都能燉出濃濃的肉香，是速養(yǎng)豬很難比的。
