曾經看到一篇文章中寫道：“美食當前，總能有所思，或饞性千嬌，食前觀察、吃中思想、品后體煨，食為天性，靜靜地咀嚼，輕輕地回味，非比尋常的韻致。吃食是一種幸福，品味是一種情趣，而透明墨香感受文字中的麻辣咸甜，更是一種快樂。能吃者得到一份暖胃的享受；會吃者找到一份心的平靜。”細細品味，深有感悟！美食現在已經成為了我們生活的一部分了， 生活，慢慢地走，慢慢地過，生活不需要華麗的外衣，也不需要甜言蜜語，生活需要的是一日三餐吃好，平平淡淡地過完每一天。我們每個人都有自己的生活習慣，為了滿足每個人的不同飲食需求，每天精選不同菜肴分享給大家，一起為每天的精彩生活加油！

燒燴三鮮

食材：水發海參3個、水發魷魚1塊、鵪鶉蛋10個、雞蛋2個、姜1塊、蔥1段

做法：

1、雞蛋攤餅切塊備用。

2、海參魷魚都切段焯水后瀝干備用，鴿子蛋煮熟剝好洗凈備用，蔥切段，姜切絲。

3、鍋里放油，炒香蔥段姜絲。

4、放入海參魷魚鵪鶉蛋爆炒一下均勻受熱。

5、放入白糖一茶匙，生抽一湯匙，番茄醬半湯匙，鹽一茶匙，翻炒均勻。

6、兌半碗高湯，大火燒開，小火燜燒三到五分鐘。

7、大火收汁，半茶匙淀粉兌一湯匙水，勾芡即可。

辣炒蟶子

食材:cheng子500g、蔥姜蒜、小米辣、

制作:1、cheng子冷水下鍋煮開后撈出過涼水洗凈,蔥姜蒜切末,小米辣切小段

2、油熱后下蔥姜蒜爆香，加入cheng子，1勺料酒，1勺生抽，半勺老抽，1小勺鹽，1小勺白糖，少許黑胡椒，最后加小米辣大火收汁出鍋

香酥蕨菜

做法：1、準備好新鮮的蕨菜洗凈，放入沸水中，汆燙至熟，撈出過涼；

2、裹炸粉150克加適量的水、鹽、五香粉拌均成面漿，放入蕨菜裹上面漿；

3、把裹上面漿的蕨菜，放入干的50克裹炸粉中，均勻裹上干粉；

4、熱鍋，倒入適量的油，油溫160度時，放入蕨菜炸；

5、微黃翻轉另外一面繼續炸至全部金燦燦的即可。

做法

1.將破好的鯰魚（買的時候賣家負責收拾）洗凈，盡量洗去魚體表的粘液，切塊濾去水份；蒜苗切成1厘米左右的小段，紅辣椒切片，小米椒切小段，生姜切片待用。

2.鍋中加入植物油，油熱后放入鯰魚煎幾分鐘。

3.待一面煎至金黃后翻一面，翻面時小心別弄破魚皮。

4.煎至兩面金黃后，放入姜片，小米椒，部份蒜苗段。

5.加入料酒，生抽，鹽，糖等調味品，加入水，沒過一半的魚即可，注意，水要一次性加足，煮魚時最好不要中途加水。

6.加鍋蓋中小火煮二十分鐘左右，讓魚肉煮入味。

7.揭去鍋蓋，加入剩下的蒜苗和紅辣椒，稍煮片刻，保持色澤。

清炒山藥

用料山藥2根；胡蘿卜半根；鹽，香蔥，蔥，蒜少許

做法山藥去皮洗凈切片，自己家吃，本著不浪費的選擇，圓片就行了。胡蘿卜，蒜洗凈切片，蔥切蔥花

熱鍋涼油，先入蔥蒜出香味，然后加入胡蘿卜，胡蘿卜要油大些才好吃，所以提前放胡蘿卜。

胡蘿卜略微翻炒后，加入山藥翻炒。

山藥邊緣略微變色后加入高湯，沒有高湯加入水也可以。由于山藥本身很黏，所以水要稍微多些，需要沒過食材。然后加入適量鹽調味，一點點糖。這時候就不要翻炒了，容易將山藥弄碎，略微搖晃鍋即可。待山藥成熟，這里看個人口味，喜歡脆的時間可以短些，喜歡面的時間長一點。山藥吸水并且湯汁略微收干加入味精出鍋即可。裝盤后撒上香蔥裝飾。

香辣炒花蛤

用料：花蛤500g；蔥姜花椒辣椒適量；海鮮醬5勺；韓國辣醬7勺；花生醬3勺；海鮮醬油3勺；胡椒粉1勺；鹽適量；味精原方里面有，我沒加，已經足夠鮮了；

　　香辣炒花蛤的做法：

　　花蛤洗凈

　　放大量蔥姜煮水，水開后下花蛤焯水，花蛤嘴張開就可以撈出

　　炒鍋燒熱，加油，蔥姜花椒辣椒爆香，下秘制醬翻炒，加花蛤繼續翻炒兩分鐘，花蛤全部裹上醬汁關火盛出。

　　烹飪技巧：分享一下我清洗花蛤最喜歡用的方法。取一個帶蓋的大盒子，把花蛤放里面，加水，蓋上蓋子用力搖晃，這樣重復幾次，花蛤肚子里的泥沙就會吐得干干凈凈。

醬汁杏鮑菇

材料：杏鮑菇2個、生抽1勺、老抽1勺、蠔油1勺、糖半勺、蔥2根、水淀粉少許

做法：

1、杏鮑菇洗凈切片，用小刀斜切十字花型，調料汁：一勺老抽?一勺生抽?一勺蠔油?半勺糖

2、熱鍋入油，下鍋煎至兩面金黃，撈出備用

3、熱鍋入油下去蔥末爆香加入杏鮑菇，倒入料汁，煮五分鐘左右倒入一點水淀粉勾芡即可出鍋。

海筍玉米蘑菇湯

用料：玉米1根，海筍10克，姜2片，胡椒粉1小勺，海鮮菇，白玉菇，口蘑，鹽適量

做法：

1、準備食材。

2、玉米切段，口蘑切成薄片備用。

3、將各種菌菇放入沸水中略焯后撈出備用。

4、將切段的玉米放在砂鍋中，大火煮開。

5、加入海筍和姜片，再次煮開。

6、轉小火，加入焯好的菌菇。

7、燉約二十分鐘左右，加入鹽調味。

8、再略燉一會，加入少許胡椒粉即可食用。

爆炒豬心

做法1.首先把豬心洗干凈，去除筋膜，切成薄片。

2.青紅辣椒切塊備用。

3.姜蒜切碎備用。

4.準備小半碗水，加入一勺淀粉，適量生抽攪拌均勻。

5.鍋中燒開水，放入適量的料酒，水煮開后放入豬心焯水半分鐘，豬心變白后迅速撈出瀝干水分備用。（這一步是為了去除血腥味）

6.鍋中放入適量油燒熱，然后放入蒜姜爆香。

7.蒜姜爆香后倒入焯過水的豬心片大火翻炒片刻。

8.豬心翻炒片刻后加入青紅椒下鍋翻炒，此時加入適量的生抽，蠔油，鹽，迅速翻炒至入味。撒入適量胡椒粉拌勻。

9.辣椒快熟時，放入水淀粉勾芡收汁即可。

小米蒸排骨

做法：1、小米泡水三個小時；

2、排骨泡水三十分鐘，去掉血水；

3、加入白糖3克，鹽5克，生抽20克，料酒10克，蠔油10克，辣椒醬15克；

4、腌2個小時入味；

5、排骨加入小米攪拌均勻；

6、土豆切片放入容器底部；

7、再倒入小米排骨，上籠蒸40分鐘左右即可。

蒜蓉油麥菜

1.油麥菜洗凈，切段

2.大蒜切成蒜蓉

3.鍋燒熱，倒入油，油開，放入蒜蓉，炒出香味，放入油麥菜，炒成8分熟，放鹽

泡椒墨魚仔

1.墨魚仔處理清洗干凈

2.放水中輕微焯燙至變色

3.撈出瀝水備用

4.姜去皮切絲，大蒜切片，蔥切小段，花椒燈籠椒備好

5.起鍋加入姜絲，蒜片，蔥段，花椒，豆瓣醬炒出香味紅油

6.加入紅泡椒，醬油，少許清水煮開

7.加入墨魚仔翻炒片刻

8.最后加少許鹽翻炒均勻即可

手撕茄子

做法1、茄子洗干凈去掉兩頭，切成均勻的長段

2、茄子放入蒸鍋中大火蒸10分鐘

3、搗蒜泥

4、蔥姜切末、小米椒切圈

5、生抽、醋、鹽、糖調汁兒

6、蒸好的茄子稍微冷卻后用手撕成長條擺在盤中

7、將調好的汁澆在茄子上，蔥花、姜末、蒜泥、小米椒放在茄子上面即可

鐵板脆椒牛肉

做法：1、牛肉片長4厘米、寬3厘米的薄片，加鹽、味精、生粉5克、生抽、嫩肉粉、老抽腌漬10分鐘，入燒至五成熱的色拉油中小火滑0、5分鐘，撈出控油；脆香椒入燒至七成熱的色拉油中中火浸炸0、5分鐘，撈出備用。

2、二湯、白糖、生粉5克、味精調勻成芡汁；鍋內留10克色拉油，燒至七成熱時放入蒜片、蔥段、姜片、辣妹子醬、蠔油煸香，入牛肉、芡汁大火翻勻，入脆香椒、芝麻、炸花生大火炒勻，淋香油出鍋，裝在大火燒了10分鐘的鐵板上，撒蔥花即可。

芥蘭炒臘腸

食材：芥蘭、臘腸、彩椒、蒜姜、鹽、雞粉、蠔油、胡椒粉

做法：

1、芥蘭洗凈切段，臘腸切片，彩椒切條，蔥姜切片；

2、鍋中放水燒開，加鹽、少許油，倒入切好的芥蘭段，焯水倒出控干水份備用；

3、熱鍋放油，油熱后放入臘腸煸炒至香，倒入蒜姜片爆香，倒入處理好的芥蘭，彩椒條翻炒至斷生，放入蠔油、胡椒粉、雞精、鹽調味，大火翻炒均勻即可出鍋。

辣椒炒茭白

食材：茭白180克、青椒，紅椒各20克、姜片、蒜末、蔥段各少許；鹽3克、雞粉2克、生抽、水淀粉

做法：

1、將食材洗凈，茭白切片，青椒、紅椒去籽切小塊；

2、鍋中注水燒開，加入食用油、2克鹽；

3、放入茭白、青椒、紅椒，煮約半分鐘至斷生，將焯煮好的食材撈出，備用；

4、用油起鍋，放入少許姜片、蒜末、蔥段爆香，倒入焯煮好的食材，炒勻；

5、加入1克鹽、雞粉、生抽，炒勻調味，倒入水淀粉，將鍋中食材炒勻；

6、把炒好的食材盛出，裝盤即可。

砂鍋娃娃菜

食材：五花肉、娃娃菜、油豆腐、大蒜、鹽、蠔油、生抽、雞精、老干媽

做法：

1、將五花豬肉放至冷水鍋內煮至熟，取出切成薄片；

2、大蒜去皮切片；娃娃菜洗凈切成小段，分開葉片和根莖部分；

3、炒鍋燒熱，放入油，涼油放入肉片，小火煸炒至肉片出油脂，肉片轉金黃色；下入娃娃菜根莖部份，加入鹽、蠔油、生抽、雞精、老干媽調味，炒至根莖變軟；再加入葉片，大火翻炒幾下，加入適量清水，水量沒過所有食材；

4、加入油豆腐，大火燒開后轉小火再燉上5分鐘，移入燒熱的砂鍋中即可。

涼拌牛肉

做法：1、牛腱子泡清血水后洗凈；

2、準備調料包，生姜片和小蔥；

3、先把牛腱子冷水下鍋焯水后撈起洗凈；

4、熱鍋倒油，溫油加入蔥姜爆香，再把牛肉下入翻炒出香味后加入黃酒、加入紅燒醬油炒出醬油香味后加入開水；

5、全部倒入高壓鍋內，壓25分鐘；

6、準備好料汁的調料（油辣椒、香油、紅酒、醋、鮮醬油、香菜、熟花生碎、蒜末）

7、碗內加入鮮醬油，紅酒醋，油辣椒，香油，蒜末拌勻后，再加入一勺壓好的牛肉湯拌勻；

8、把牛肉撈起晾涼后切片裝入盆中，再把調好的料汁加入，最后撒上花生碎和香菜碎后上桌。

清蒸鱈魚

食材冷凍鱈魚塊300g\蒸魚豉油15ml

姜絲5g\大蔥蔥白1根\香蔥適量

綠菜椒2g\紅菜椒2g\黃菜椒2g

料酒20ml\白胡椒粉2g\橄欖油20ml\鹽3g

做法1. 鱈魚塊在室溫下解凍后用刀刮去鱗片，洗干凈瀝干，加入料酒、白胡椒粉、鹽。

2. 用手抓勻后腌制20分鐘，中間的時候可以將鱈魚翻個個兒，便于兩面入味。

3. 將大蔥蔥白切段，并將每一段一分為二；將香蔥蔥白切小段、蔥葉切細絲；同時準備好姜絲和紅黃綠菜椒絲。

4. 取一圓盤，將大蔥段鋪底。

5. 將腌好的鱈魚塊放在大蔥蔥段上，鱈魚塊上放入蔥絲和香蔥蔥白段兒。

6. 大火燒開蒸鍋里的水，將魚塊放入鍋中，蒸10分鐘后關火，不要揭鍋蓋，燜3分鐘。

7. 取出蒸好的鱈魚塊，將所有的蔥姜連同蒸魚的湯汁棄掉不要，淋上蒸魚豉油。

8. 鋪上紅黃綠菜椒絲，放上香蔥葉絲兒。

9. 炒勺中放適量橄欖油，小火加熱油至冒微煙，迅速潑在蔥絲和菜椒絲上即可。

酸白菜辣煮角魚

初加工：角魚1條（重約750克）宰殺制凈，在兩面分別打上一字花刀，加入鹽5克，料酒、蔥段、姜片各10克腌制片刻。

熟處理：1、取腌制后的角魚拍生粉（約耗50克），鍋內色拉油燒至六七成熱時，手提魚尾，將魚身放入色拉油中，小火浸炸至色澤金黃，撈出控油。

2、鍋內留底油，燒至五成熱時，放入東北酸白菜絲50克、海南黃燈籠辣椒醬30克煸炒出酸辣味，倒入魚湯300克大火燒開，用鹽6克、雞粉5克、綿白糖15克、香醋10克、一切為二的小青檸6個調味，下入魚，中火煮2—3分鐘，出鍋裝入容器內。

酸湯牛腩

材料：牛腩、西紅柿、番茄醬、蔥白、姜、蠔油、料酒、鹽、生抽、老抽、陳醋、白糖、八角、桂皮、沸水

做法1. 將西紅柿洗凈后在表面輕切十字花刀，放入沸騰的水中焯燙至表面皮卷起，去皮，放容器里壓碎；

2．牛腩切小塊后，在沸水中焯至變色后撇去浮沫，撈出備用；

3. 將牛腩、蔥、姜、蠔油、料酒、生抽、老抽、陳醋、糖、八角、桂皮及一小碗沸水倒入電壓力鍋中，攪拌均勻后壓30分鐘；

4. 炒鍋加熱后放入少許油，倒入壓好的番茄醬中火炒至起沙，加入番茄醬后繼續翻炒；

5. 將壓力鍋中燜好的牛腩挑去蔥姜八角和桂皮后，將牛腩和湯汁全部倒入鍋中，與番茄醬混合，調入鹽；

6 . 鍋中食材沸騰后，將全部食材倒進砂鍋中，小火燜40分鐘，吃時調入少許香菜即可。

香煎蓮藕肉餅

用料蓮藕兩節；豬肉250g；雞蛋清兩個；淀粉適量；★鹽一小勺；★生抽適量；★胡椒適量；★糖適量；★五香粉適量；★麻油適量

做法

豬肉蓮藕洗凈切大塊、分別丟進料理機里攪拌成碎。（蓮藕不要攪得太碎，要留一些口感）

熱鍋，放油（油不要太多），在油還未加熱的時候將肉餅整形后放入，用小火煎制。
