今天是處暑節氣，也是北京相當悶熱的一天。其實過去的這個周末，濕度大，溫度高，就是不見降雨。

這樣的天氣，和家人一商量，燉肉肉就免了，都想吃點兒簡單的，拌上兩個涼菜，吃起來才比較爽。

相比于酷暑中的餃子、面條、烙餅等面食，在漫長的三個多月中吃了個遍，應對秋季里的炎熱，咱們就吃點別樣的面食。

北方人餐桌上的炒餅，可葷可素，可咸可淡，吃起來特別香。切得細細的餅絲，可搭配圓白菜、白菜、豆芽菜等，打入雞蛋或者肉絲打底，期間翻炒的時候搭配蒜末、香菜段等，炒出來的一盤，怎一個香字可以形容？

做炒餅也相當簡單，做晚飯沒問題，早餐想吃上一盤，時間也來得及。這里花兒就和大家分享圓白菜肉炒餅的做法：

【圓白菜肉炒餅】

食材準備：

餅絲300克

豬肉150克

圓白菜葉子：5-6片

香菜兩根、蒜兩瓣

食用油、料酒、生抽、鹽、香油

制作步驟：

1、餅絲在超市或者菜市場都有賣，但凡賣烙餅、面條的地方，一般都有餅絲，需要多少就現處理多少。

2、圓白菜葉子，取5-6片，洗凈瀝干水分，切絲備用，150克的豬肉切絲，加入一大勺料酒和少許鹽，抓勻備用。2瓣蒜切蒜末，2根香菜去梗洗凈切段。

3、做炒餅和炒面一樣，炒鍋里的油要多放一點兒，防止糊鍋，

等油燒熱后，倒入腌制好的肉絲，快速翻炒變色。

4、接著倒入圓白菜絲，倒入2大勺生抽、適量鹽，翻炒均勻。

5、2分鐘后倒入餅絲，翻炒均勻后等個一分鐘。

放入蒜末，炒餅里加入蒜末，特別提香。無論是這款肉炒餅，還是加入雞蛋的素炒餅，加點蒜末都適合。

6、最后倒入切好的香菜段，沒有這里可以不放，再淋入少許香油，炒勻即可關火。
