我相信很多人和我以前一樣，覺得燉肉最簡單了，切點肉、放蔥姜、加水慢燉就行。

可每次燉出來的肉，都不盡人意，要么肉質發柴、嚼著費勁，要么清湯寡水、沒有香味，燉半天也不軟爛，白白浪費了，好食材。

我鉆研燉肉好多年，試過無數方法，終于摸清了門道。原來燉肉最忌諱只放蔥姜，蔥姜只能簡單去腥，根本達不到，軟爛入味、增香提鮮的效果。

只要燉肉時，多放一勺家常調料，不管是豬肉、牛肉還是羊肉，燉出來，都軟爛脫骨，湯濃味香，一點都不柴。

以前我燉肉總踩坑，肉焯水后直接下鍋燉，哪怕燉上一兩個小時，瘦肉部分依舊發硬，老人小孩吃著特別費力。

后來家里長輩，教了我這個秘訣，不用復雜香料，不用長時間燜煮，就一勺普通的黃豆醬，瞬間就能讓，燉肉的口感和香味，提升一個檔次。

很多人覺得，燉肉放醬料會齁咸、掩蓋肉香，其實完全不會。我們只需要一小勺，原味黃豆醬，炒開之后醬香濃郁，能很好地中和肉類的腥膩，還能給肉質軟化助力。

黃豆醬里的天然發酵成分，能溫柔分解肉里的粗纖維，不用高壓鍋，普通鍋慢燉，也能快速燉爛。

做法特別簡單，全程都是家常操作。先把新鮮的五花肉，或者牛腩切成大塊，冷水下鍋，加少許料酒和姜片焯水，煮開撇掉浮沫。

撈出用溫水沖洗干凈，瀝干水分備用。記住千萬別用冷水沖熱肉，冷熱交替，肉質會瞬間收緊，再怎么燉都會發柴。

鍋里放少許食用油，不用多，油熱后把肉塊倒進去翻炒，炒到肉表面，微微焦黃，逼出多余油脂，吃起來肥而不膩。

這時候關鍵步驟來了，挖一勺黃豆醬倒進鍋里，再放蔥段、姜片、兩粒八角，一起翻炒均勻，讓每一塊肉，都裹上一層薄薄的醬汁。

翻炒出濃郁的醬香味后，加入足量的開水，一定要開水！沒過所有肉塊，大火燒開后，轉小火，蓋上鍋蓋慢燉。

豬肉燉一個小時左右，牛肉、羊肉適當延長半小時，最后根據自己的口味，加少許鹽調味即可。

燉好的肉色澤紅亮誘人，輕輕一戳就爛，入口軟糯不柴，滿滿的肉香，混合著淡淡的醬香，一點都不油膩。
