還有些面食，剩下來再熱熱，比剛出鍋那會要美味，比如手搟面、炒剩米飯，還有今天這個茴香餅，不油炸不放肉，剩了再熱熱也好吃。

這小茴香餅，做法相當簡單，不揉面、不搟面，筷子一挑，鍋里一放，就能做出來。口感松軟易消化，牙口不好也不怕。

小茴香餅

【阿胖做法心得】

小茴香，氣味獨特，自帶芳香。當蔬菜吃，開胃促消化，富含鈣、鉀、維生素C，和葉酸、胡蘿素等。搭配面粉，可以包餃子、包子、餡餅、菜盒子、菜饃等。

當調料用，能去肉腥味，不管燒肉，還是燉骨湯，都可放進去，能中和豬肉、鴨肉的寒濕、油膩，助消化不漲肚，提鮮又增香。

【食材準備】：小茴香苗、小麥面粉、雞蛋。

【詳細做法如下】：

1、一大把小茴香，洗干凈，不用控水，直接切碎就能用。

2、小茴香含水量少，不要切太長，盡可能切碎，吃著才鮮嫩不柴。最后，再打入3個雞蛋。茴香餅做出來想顏色翠綠，切碎后，加一點小蘇打拌勻，就能固色。

3、接著加入小麥面粉、食用鹽、酵母、一點泡打粉。

4、攪成稠面糊。面粉別放太少，如果菜多面少，會難發酵，適當多點面粉。之后，放溫暖地方，等著發滿盆。

5、天氣暖和，常溫發酵，速度就很快，大概不到一個小時，已發酵滿滿一盆。

6、用筷子像這樣，挑起一小團，放入平底鍋，或電餅鐺里即可。

7、這里的油，要比平時烙餡餅，多放一些，這樣面餅烙出來，會更松軟。平底鍋中間火力大，容易糊餅，就不放了。

8、若用氣灶，開小火。若用電餅鐺，就開大火。底部烙金黃，翻面。

9、邊緣若是還有生面糊，可以把小餅立起來，再專門烙一烙。

最后，烙到，小餅按壓松軟，筷子戳透，沒有生面糊，說明就熟了。

咬一口，小茴香獨特香味，在嘴巴里快速散開。

若是做的多，下次再吃，可以像平時熱饅頭一樣，水開上鍋，開大火，熱3分鐘就行了。
