夏天一到，夜宵攤上最饞人的就是那盆紅彤彤、麻辣鮮香的小龍蝦。但外面吃總擔(dān)心洗不干凈，想自己在家做——很多人拎回活蹦亂跳的小龍蝦，水龍頭下一沖就下鍋，那基本等于吃泥巴拌調(diào)料。

小龍蝦生活在水塘淤泥里，蝦頭、蝦腮、蝦線是真正的"藏污納溝重災(zāi)區(qū)"，光沖表面根本沒用。今天就把家庭清洗小龍蝦最靠譜的一套流程講清楚，按著做，干凈到蝦黃都能放心留著。

一、先浸泡——讓它自己吐臟東西

買回來的活小龍蝦先沖掉表面浮泥，放大盆里加清水沒過蝦身，放2～3勺鹽+2勺白醋（或幾滴食用油），浸泡30～60分鐘。

鹽水刺激它吐泥沙，白醋軟化殼上污垢，油膜能逼它多呼吸、多排臟。你會(huì)看到水慢慢變渾——那就是臟東西出來了。泡完倒掉渾水，再?zèng)_兩遍。

怕被夾？泡之前放冰箱冷藏10分鐘，蝦會(huì)變溫順，好抓又不死。

二、刷洗——重點(diǎn)刷這三個(gè)地方

戴厚橡膠手套（防夾！），捏住蝦背，讓腹部朝上：

- 蝦腹褶皺：用硬毛牙刷順著紋路刷至發(fā)白，這是藏泥最多的地方

- 鉗子根部、關(guān)節(jié)縫隙：用刷子戳進(jìn)去刷

- 頭部與身體連接處：輕輕刷，別把蝦黃刷破

刷到腹部白凈、水沖出來清了為止，這步別偷懶。

三、剪頭——去胃囊、去腮（最關(guān)鍵！）

用廚房剪刀從蝦眼后方約1/3處斜剪，頭部前端剪掉后你能看到：

- 黑色小囊=蝦胃：必須挑出來扔掉，里面全是泥沙殘?jiān)?/p>

- 黃色蝦黃：可以保留，是很多人愛的精華，注意別弄破胃囊污染它

- 絮狀灰色腮：兩手捏住兩側(cè)腮根往外拽掉——腮是過濾器官，重金屬、臟東西全在這兒，必須去干凈

剪完可用細(xì)水流沖一下頭部空腔。

四、抽蝦線——一擰一拉就出來

捏住小龍蝦尾部中間那片尾翼，左右輕輕擰半圈～一圈，再緩緩?fù)饫谏r線（消化道）會(huì)完整抽出。

如果斷了也別慌，用牙簽從背部第二節(jié)膜處挑一下通常能帶出來。蝦線不去，煮熟吃著會(huì)有沙質(zhì)感。

想保留完整蝦身做清蒸，可煮熟后再抽；做麻辣/十三香建議下鍋前抽掉。

五、收尾沖洗+剪腳

細(xì)小腿腳絨毛也藏泥，可以直接剪掉（留大鉗子）。最后流動(dòng)水下逐只沖洗，掀開腮蓋看看——腮窩呈白色或淡粉紅才算合格，仍發(fā)黑建議再?zèng)_或重泡片刻。

瀝干水分，就可以下鍋?zhàn)雎槔薄⑺馊亍⑹憷玻√幚硗杲ㄗh2小時(shí)內(nèi)烹飪，別久放。
