養護血管是我們保持健康的重要環節。而在我們的日常飲食中，就有一些堪稱血管“清道夫”的食物，只要隔天吃一次，就能幫助我們強化血管。

第一；木耳炒芹菜瘦肉

食材：豬瘦肉（里脊肉最佳）、芹菜（西芹或香芹均可）、干黑木耳，大蒜2瓣、生姜2片、紅椒（可選，為了配色）。生抽、老抽、料酒、淀粉（生粉）、鹽、食用油、雞精（可選）。

做法：1泡發木耳：干木耳用冷水泡發（約1-2小時），去蒂，撕成小朵。關鍵點：洗凈后一定要焯水（沸水煮1-2分鐘），撈出瀝干。這不僅能去土腥味，還能防止炒的時候炸鍋。

2處理芹菜：芹菜洗凈，斜刀切成段（斜切接觸面大，更入味）。如果是老芹菜，記得撕去背面的老筋。

3切肉：瘦肉逆著紋路切成薄片或細絲。

4腌制瘦肉，在切好的瘦肉中加入：1勺生抽半勺料酒少許胡椒粉（去腥）1勺淀粉，抓拌均勻后，最后淋入少許食用油鎖住水分。腌制10-15分鐘。

5熱鍋涼油（油溫5成熱），放入腌好的肉片。用筷子快速劃散，炒至肉色變白即可盛出備用。注意：不要炒太久，變白就熟了，老了口感不好。

6鍋中留底油，放入姜絲、蒜片（和紅椒）爆香。先倒入芹菜段，大火快速翻炒約1分鐘，炒出芹菜的香味，至斷生。加入焯過水的木耳，繼續翻炒30秒。

7將之前炒好的瘦肉倒回鍋中。加入適量鹽、少許生抽提鮮。如果喜歡顏色深一點，可以加幾滴老抽。大火快速翻炒均勻（約20秒），即可出鍋。

第二：洋蔥炒雞蛋

食材：洋蔥 1 個、雞蛋 3–4 個、鹽、生抽少許、蔥花、食用油

做法；1洋蔥去皮，對半切開，順著紋路切細絲；雞蛋打入碗中，加一點點鹽攪勻備用。

2熱鍋倒油，油熱倒入蛋液，定型后劃散炒成大塊，盛出備用。

3鍋里留底油，下洋蔥絲中火翻炒，炒到洋蔥變軟、微微透明出香味。

4倒回炒好的雞蛋，加適量鹽、少許生抽提鮮，快速翻炒均勻。

5撒點蔥花，翻炒兩下即可出鍋。

第三：海帶排骨湯

食材：豬排骨 ，干海帶生姜 1塊、大蔥 1段、料酒。鹽、醋（幾滴）、白胡椒粉（可選）。

做法；1處理海帶（去腥關鍵）泡發：干海帶用淘米水浸泡（比清水更容易泡發且洗得干凈），泡軟后反復搓洗表面的黏液和泥沙。

2切塊：將海帶切成菱形片或打成海帶結。焯水：燒一鍋開水，放入海帶煮2-3分鐘，撈出瀝干。這一步能有效去除海帶的腥味和過重的咸味。

3處理排骨，浸泡：排骨剁成小段，放入冷水中浸泡20分鐘，泡出血水，洗凈備用。，焯水：冷水下鍋，放入排骨、姜片、蔥段和一勺料酒。大火煮開后撇去浮沫，煮2分鐘撈出。清洗：用溫水沖洗排骨表面的浮沫（不要用冷水沖，否則肉質會收縮變硬）。

4入鍋：準備砂鍋或燉鍋，放入排骨、姜片和蔥段。加水：一次性加入足量的熱水（水量要沒過食材，中途盡量別加水）。滴醋：在水中滴入幾滴醋（不要多，嘗不出酸味即可）。醋能幫助排骨中的鈣質溶解，也能讓肉質更軟爛。

5慢燉：大火燒開后，轉小火蓋蓋慢燉30分鐘。放入處理好的海帶（和泡好的黃豆）。繼續小火燉20-30分鐘，直到排骨酥爛、海帶軟糯。

6撿出蔥姜不要。加入適量的鹽調味（鹽要最后放，放早了肉容易老）。撒上少許蔥花或白胡椒粉提鮮，即可出鍋。

第四；西紅柿燉牛腩

食材：牛腩 、西紅柿 3 個、生姜、大蔥、八角 2 顆、香葉 1 片、鹽、少許生抽、冰糖少許

做法；1處理牛腩,牛腩切大塊，冷水下鍋，放姜片、料酒，大火煮開焯水，撇凈浮沫，撈出用溫水沖洗干凈瀝干。

2炒香底料,鍋中放少許油，下蔥姜、八角、香葉小火炒出香味，放入牛腩翻炒片刻，炒出肉香。

3炒出番茄紅油,西紅柿兩個切塊下鍋，小火慢慢翻炒，炒出沙、炒出紅油。

4慢燉軟爛,加足量開水沒過牛腩，放少許生抽、一小塊冰糖提鮮，大火燒開轉小火蓋蓋慢燉 60–90 分鐘，燉到牛腩用筷子能輕松扎透。

5收尾調味,剩下一個西紅柿切塊放入，再燉 10 分鐘，加鹽調味即可出鍋。

第五：清蒸鱸魚

食材：新鮮鱸魚 1條，大蔥（或小蔥）、生姜、紅椒（可選，為了配色）。蒸魚豉油，料酒、食用油。

做法：1魚的處理（去腥基礎）清洗：鱸魚宰殺后，一定要把肚子里的黑膜和貼著脊骨的淤血徹底洗凈，這是腥味的主要來源。改刀：在魚背肉厚的地方劃兩刀（或者沿著脊骨片開，讓魚呈“孔雀開屏”狀），方便受熱均勻，熟得快。腌制：在魚身上抹少許料酒，塞入姜片和蔥段，腌制10分鐘。https://github.com/cfastan/yqdctx/blob/main/sXQtWI.md

2擺盤技巧.架空：取一個大盤子，底部鋪上幾片姜和蔥段。放魚：把魚放在蔥姜上。小竅門：這一步是為了讓蒸汽能在魚身下流通，保證魚身上下熟度一致，不會上面老了下面還生著。

3蒸制，水開再下鍋：蒸鍋內水燒開，大火上汽后，將魚盤放入。大火蒸 7-8分鐘。關火后，不要馬上揭蓋，利用余溫“虛蒸”2分鐘。注意：時間過長肉質會變老，像嚼木渣一樣。

4潑油激發香味（靈魂步驟）倒水：取出蒸好的魚，倒掉盤子里蒸出來的湯汁。重點：這個湯汁非常腥，一定要倒掉！

5去蔥姜：把魚身上蒸爛的舊蔥姜扔掉。鋪新料：在魚身上鋪上切好的新鮮蔥絲、姜絲、紅椒絲。

6淋熱油：燒一勺熱油，燒到冒青煙，然后迅速淋在蔥姜絲和魚身上。效果：你會聽到“滋啦”一聲，蔥姜的香味瞬間被激發出來。

7從盤子邊緣淋入蒸魚豉油（不要直接淋在魚身上，以免破壞魚皮色澤），即可上桌。
