豬肝這種食材，處理得當(dāng)便是難得的美味，處理不好則腥氣敗興。貴州藤椒豬肝的做法，恰巧找到了一種平衡點，用藤椒的鮮麻與辣椒的干香，去馴服豬肝本身的野性。這道菜在貴州人家里的餐桌上并不少見，尤其在暑熱未消的初秋，或者濕冷的冬日，一盤麻香四溢的炒豬肝，既是下飯的利器，也能喚醒被天氣壓制的食欲。與川菜中常見的水煮或鹵制不同，貴州的做法更講究大火快炒，追求豬肝嫩如豆腐的口感，同時讓藤椒的清香在高溫中徹底釋放，這種烹飪理念其實很樸素，就是要把最家常的食材，做出讓人驚喜的滋味來。

新鮮的豬肝買回后，先剔除表面的筋膜，切成兩毫米厚的薄片，放入清水中反復(fù)抓洗，直到水色不再渾濁。這一步是為了盡可能去除血水，是去腥的基礎(chǔ)。洗凈的豬肝要瀝干水分，加少許食鹽、白胡椒粉和高度白酒抓勻入味，再放入一勺紅薯淀粉，用手朝著一個方向攪打上勁，讓淀粉均勻包裹住每一片豬肝，最后淋入少量食用油封住表面，腌制十五分鐘左右。趁著腌制的時間，將小蔥切成寸段，老姜和獨頭蒜切成碎末，青紅小米辣切成圓圈，再準(zhǔn)備一小碗青花椒，也就是這道菜靈魂所在的鮮藤椒。

炒制的環(huán)節(jié)考驗的是對火候的掌控。鍋中燒寬水，水沸后放入姜片和蔥結(jié)，將腌好的豬肝迅速倒入，用筷子輕輕撥散，待豬肝變色、邊緣微微卷起時，立刻撈出控水，這個過程不過十幾秒鐘。另起一口鍋燒熱，倒入比平常炒菜稍多些的菜籽油，油溫七成熱時，下入藤椒、姜蒜末和辣椒圈，小火煸炒出濃郁的麻香氣味。接著加入一小勺貴州特色的糟辣椒或者郫縣豆瓣醬，炒出紅油后轉(zhuǎn)成大火，將焯過水的豬肝回鍋，同時沿鍋邊淋入用生抽、少許老抽、料酒、白糖和幾滴香醋調(diào)好的料汁，快速顛鍋翻炒，讓料汁與豬肝在高溫中充分融合。最后撒入蔥段，淋上一勺藤椒油，翻勻后即刻出鍋裝盤
