你們是不是經(jīng)常有這種感覺：明明照著菜譜一步步做，用料也沒省，可做出來的菜，跟飯店里比，總覺得差了那么點兒意思？

那問題出在哪兒呢？很有可能就藏在你放調(diào)料的時間、順序和那一點點“小心機”上。

別急，今天咱們不聊虛的，我把一位大廚朋友私藏的調(diào)味秘訣全抖落出來。從蔥姜蒜怎么用，到放糖放鹽的先后順序……全是干貨，看完你也能燒出一桌“有靈魂”的菜！

第一，別小看那碗“湯”，它是鮮味的靈魂

大廚界有句老話：“湯是菜之寶”。一碗好高湯，比味精、雞精天然多了。

· 炒菜時加一勺：肉絲下鍋煸炒后，淋上一勺高湯，稍微“咕嘟”一會兒，鮮味立馬提升。

· 燉菜時多添點：肉類煸炒后，加足量高湯中小火煨透，再調(diào)味，那味道，絕了。

劃重點：高湯不光是你們以為的雞湯！牛骨湯、口蘑湯、甚至連泡干香菇的水，澄清后都是提鮮神器。都能當作高湯使用！

第二，香料別亂扔，用對了是點睛之筆

燉肉時，很多人抓起八角、桂皮就往里扔。

· 注意顏色：做清湯或顏色淺的菜（比如鹽水鴨），千萬別放肉桂（桂皮），它會讓湯色發(fā)褐。想增香可以換成香葉。

· 腌肉有竅門：直接把桂皮、豆蔻扔進肉里腌？基本沒用！正確做法是把它們打成粉末，用料酒調(diào)成糊糊再抹到肉上，香味才能滲進去。

懶人妙招：把你常用的幾種香料按比例打成粉末，裝玻璃瓶里。炒菜、腌肉、調(diào)餡時直接撒，省得熟了一樣樣往外挑。

第三，糖和鹽，誰先下鍋有講究

記住一個核心原則：糖要在鹽之前下鍋！

如果先放鹽，會逼出食材里的水分，糖就融在水里“罷工”了，起不到提鮮和上色的作用。

做紅燒肉這類甜口的菜，糖要分兩次放：第一次讓甜味滲進肉里，第二次收汁時再放，顏色才紅亮、味道才醇厚。

第四，醬油別早放，鮮味最怕高溫

醬油的鮮味來自氨基酸，高溫久煮會流失，糖分還會焦化發(fā)苦。

· 燉菜：七成熟時放醬油。

· 炒菜：出鍋前沿著鍋邊淋入，瞬間激發(fā)出醬香味。

第五，用好“酸”味，醋和檸檬汁是神助攻

· 讓蔬菜更脆爽：炒土豆絲、豆芽時，快出鍋前淋點白醋，不僅顏色更白凈，口感也嘎嘣脆。

· 解辣解膩：菜炒辣了或太油膩了，加點醋或檸檬汁，立馬清爽。

· 燉肉加速軟爛：燉牛腩時滴幾滴醋，肉更容易燉爛。

注意：檸檬汁別兌水，現(xiàn)擠現(xiàn)用，冷藏也別超過3天。

第六，生姜用對方法，去腥效果翻倍

· 去腥用姜汁：腌魚片、魚塊，用姜汁或姜末比用姜片效果好得多。

· 燉肉用拍松的姜：把姜塊用刀拍裂，或者用針扎些孔，香味釋放更徹底。

· 關鍵時機：做魚時，別一上來就放姜。先把魚煎一下，烹點料酒后再放姜，去腥效果最好。

· 食用堿：只推薦煮玉米粥時加一點，能釋放營養(yǎng)。其他粥千萬別加，會破壞維生素。和面時加能增加筋道，但寧少勿多，多了發(fā)苦發(fā)黃。

· 味精/雞精：

· 出鍋前放，70-90℃最鮮，溫度過高有毒。

· 炒雞蛋千萬別放，雞蛋和鹽自己就能生成味精。

· 涼拌菜別直接撒，用溫水化開再用。

· 本身很鮮的食材（如雞湯、鮮菌），就別畫蛇添足了。

第八，大蔥、大蒜，家常調(diào)味里的“掃地僧”

· 大蔥：蔥白去腥最強，燉肉時切大段放進去，還能吸附血沫。拌餡時，蔥最后再放，否則會有“臭蔥味”。

· 大蒜：燒茄子、炒扁豆這種“毒”性強的菜，必須放蒜，而且最好出鍋前放生蒜末，殺菌效果才好。追求蒜香不怕辣，選獨頭蒜或紫皮蒜。

第九，羊肉去膻的“三板斧”

1. 花椒水：拌羊肉餡時，用花椒水代替清水打進去，膻味大減。

2. 兩遍醋：爆炒羊肉時，入鍋噴一次醋去膻，出鍋前沿鍋邊再噴一次醋增香。

3. 白蘿卜/綠豆：煮羊肉時扔幾塊白蘿卜或一小把綠豆，膻味就跑光了。

第十，幾個你意想不到的“調(diào)味高手”

· 蝦皮：打成粉末當天然味精用，撒在炸雞上或者揉進烙餅里，咸香無比。

· 茶葉：燉牛肉時包一小撮普洱茶，肉爛得快，還有獨特茶香。

· 薄荷：煮粥或炒肉絲時放幾片，清新解膩。
