要說餃子餡里的經典款，豬肉韭菜餡絕對能排前三。翠綠的韭菜裹著粉嫩的肉餡，咬一口汁水四溢，鮮味直沖天靈蓋——想想就流口水。

但很多人自己做的時候，翻車率實在太高了：韭菜出水，餡兒稀得包不住；吃嘴里發酸，一股怪味；肉餡又干又柴，跟餃子館的完全是兩個物種。

我也是踩了無數坑之后，才總結出這套豬肉韭菜餡的正確打開方式。今天毫無保留全部分享出來，看完你也能調出飯店級別的餃子餡。

一、選料：肉和韭菜的比例是靈魂

先說肉。豬肉韭菜餡，肉的肥瘦比例至關重要。

最佳比例：三分肥七分瘦。純瘦肉調的餡又干又柴，沒有油脂滋潤，韭菜也顯得寡淡。五花肉或者前腿肉都行，讓賣肉的師傅直接絞成肉餡，或者自己回家剁——手工剁的顆粒感更強，口感更好。

再說韭菜。韭菜要選葉片寬厚、顏色深綠的，這樣的韭菜水分足、香味濃。買回來之后，有個關鍵動作：洗凈后一定徹底晾干水分。你可以攤開放在瀝水籃里風干半小時，或者用廚房紙吸干。韭菜出水，十有八九是因為洗完后沒晾干就直接切了。

二、調肉餡：打水是嫩滑的關鍵

肉餡放進大碗里，開始調味。順序很重要：

第一步：加底味。 加入生抽2勺、老抽半勺（上色用，不加也行）、蠔油1勺、白胡椒粉少許、姜末（必須加，去腥增香）、鹽適量。注意鹽別一次加夠，后面還要調。

第二步：打水。 這是肉餡嫩滑的核心機密。準備一小碗蔥姜水（蔥段+姜片用熱水泡10分鐘，晾涼），分三次倒入肉餡中，每次倒完都朝一個方向使勁攪拌，直到水分完全被肉吸收再加下一次。一斤肉餡大約打入100～150毫升蔥姜水，打到肉餡發黏、起膠、有彈性為止。

這一步千萬別偷懶，打水充分的肉餡，煮熟后是爆汁的，而不是干巴巴的。

第三步：封油。 打完水之后，加入一勺香油和兩勺熟油（燒熱后晾涼的食用油），攪拌均勻。油能鎖住水分，讓肉餡更潤。

三、韭菜的處理：不出水的秘訣全在這里

韭菜晾干后切成細末，注意是切不是剁，剁容易出水。

切好的韭菜放入碗中，先淋入兩勺香油或者熟油，拌勻。這就是韭菜不出水的絕招——油把韭菜切口封住了，鹽分就不會把韭菜里的水分逼出來。

然后再把韭菜倒入調好的肉餡中，輕輕拌勻。千萬不要過度攪拌，拌勻就行，攪太久韭菜會蔫、出水。

四、終極一步：什么時候加鹽？

很多人習慣調餡的時候把所有調料一次性加進去，包括鹽。但韭菜遇到鹽就會迅速出水，導致餡兒越來越稀。

正確的做法是：等到要包餃子的時候，再把鹽加到肉餡里。也就是說，前面調肉餡的時候只加生抽、蠔油這些有咸味的調料，鹽先不放。等韭菜和肉餡混合好后，準備開包了，再撒入適量的鹽，快速拌勻，馬上開包。

這樣既保證了咸味，又避免了韭菜被鹽腌出水。這個方法同樣適用于韭菜雞蛋餡。

五、幾個加分小技巧

- 加一點白糖：半勺白糖能提鮮，還能中和韭菜可能出現的酸味，一舉兩得。

- 加一個雞蛋：讓肉餡更嫩滑，還能起到粘合作用，包的時候不容易散。

- 蝦仁/蝦皮：和韭菜是絕配，加一把進去鮮味直接翻倍。

- 別加十三香：十三香味道太重，會蓋住韭菜的清香味。白胡椒粉就夠了。
