入夏之后，天氣開始變得又悶又熱，身上總感覺黏糊糊的，濕氣特別重。最要命的是，連帶著胃口都變差了，以前愛吃的紅燒肉、燉肘子，現在看著就覺得膩得慌，腸胃也跟著鬧情緒，稍微吃油了點就脹氣。

作為一個無魚不歡的人，我發現夏天吃魚真的“分分種類”。像草魚、花鰱這類，雖然肉質厚實，但土腥味稍重，油脂也偏多，夏天用重油重醬去壓味兒，吃完一下午都覺得嘴里發膩，胃里沉甸甸的。不知道你們有沒有這種感覺？

所以最近這段時間，我家的餐桌上來了一次“大換血”。下面這3種魚，是我親測下來特別適合夏天吃的。它們肉質細嫩、脂肪含量低、蛋白質優質，重點是價格還很親民，清淡的做法也完全吃不出腥味，吃完腸胃沒負擔，整個人都舒坦了。如果你也怕油膩，不妨跟著我一起學起來！

01 紅燒鳊魚：軟嫩入味，下飯一絕

推薦理由： 鳊魚最大的優點就是肉質軟嫩，魚刺也比較好挑。它性質溫和，蛋白質細膩，采用家常紅燒的做法，既入味又不會掩蓋魚肉本身的鮮美。夏天沒胃口的時候，來上這么一條，鮮辣開胃，湯汁拌米飯都能吃兩碗。

具體做法：

1. 煎魚不破皮： 鍋燒熱倒入菜籽油，油熱后在鍋底薄薄撒一層鹽（這是防粘的小竅門），放入處理干凈的鳊魚，中小火慢煎，煎到兩面金黃定型。

2. 燜煮入味： 放入姜蒜末爆香，淋入2勺米酒去腥增香。倒入足量開水（注意是開水，魚肉更嫩），水量沒過魚身一半，加老抽上色，少許鹽和味精調味。蓋蓋小火燜10分鐘。

3. 收汁提香： 湯汁變濃稠時，放入青紅椒段再燜2分鐘，出鍋前撒上一把小蔥，保留一點湯汁出鍋，超級誘人！

02 蒜蓉豆豉蒸鱸魚：清蒸做法，入口即化

推薦理由： 夏天我家做鱸魚，十次有八次是蒸。鱸魚本身就沒什么小刺，肉質像蒜瓣一樣白嫩。搭配蒜蓉和豆豉清蒸，少油少鹽，最大程度保留了魚的鮮味，吃起來入口即化，老人和孩子吃完全沒問題。

制作小技巧：

1. 孔雀開屏切法： 將鱸魚的頭尾切下，魚身從背部切斷，保持腹部相連，切成約1厘米寬的片。這樣擺盤好看，受熱也更均勻。

2. 去腥關鍵： 切好的魚用料酒、姜片、鹽腌制10分鐘，一定要倒掉腌出來的汁水，這是魚不腥的關鍵。

3. 蒸制時間： 盤底鋪上姜片，將魚擺成孔雀開屏狀，淋上剁椒、豆豉和蒸魚豉油調的醬汁。上鍋大火蒸8分鐘，關火后別急著開蓋，利用余熱再虛蒸3分鐘，口感最嫩。

03 豆瓣醬燒鯽魚：鮮辣過癮，溫補不燥

推薦理由： 鯽魚雖然刺細，但肉質極其鮮甜。夏天脾胃虛弱，用少許豆瓣醬和蔥姜蒜一起燜煮，既祛除了濕氣帶來的寒涼，又不會像麻辣火鍋那樣燥熱。魚肉蛋白好吸收，吃完全身微微發汗，感覺渾身的濕氣都排出來了，特別舒服。

家常燒法：

1. 腌制防破皮： 魚洗凈后抹鹽，加料酒蔥姜腌制10分鐘。下鍋前抹上一層薄淀粉，這是魚皮完整不破的秘訣。

2. 煎香燜煮： 油熱后下鍋煎至兩面金黃盛出。鍋留底油，爆香蔥姜蒜、小米辣，加一勺豆瓣醬炒出紅油。

3. 收汁勾芡： 倒入沒過魚身的清水，加生抽、老抽、蠔油、胡椒粉調味，放入煎好的魚，中小火燜煮15分鐘。最后淋入水淀粉勾芡，把濃稠的湯汁澆在魚身上，撒上蔥花即可。
