買過鮮香菇、平菇的朋友都知道，蘑菇這東西看著干凈，其實菌褶里最容易藏泥沙和小蟲卵。很多人洗菇就倆套路——要么直接沖兩下，炒完一咬嘎吱嘎吱磣牙；要么整盆泡水里泡半天，撈出來軟塌塌像海綿，鮮味全跑了。

我以前也犯過這錯，后來跟菜市場賣了十幾年菇的大姐學了正確洗法，才發(fā)現(xiàn)——鮮菇真不能長時間泡水！今天把不同鮮菇的清洗步驟挨個說清楚，照著做，干凈還不毀口感。

一、先記住鮮菇清洗的"黃金原則"

蘑菇像海綿，吸水特別猛，長時間浸泡會讓它：

- 吸飽水→炒的時候不停出水，怎么煎都不香

- 鮮味物質(zhì)和部分水溶性維生素溶進洗菇水里，白白浪費

- 菌體膨脹→口感發(fā)柴、軟爛，失去脆嫩感

正確思路：輕擦浮灰→去根→快速沖/淡鹽水短時浸→立即吸干。盡量把與水接觸的時間控制在幾十秒內(nèi)。

二、鮮香菇/花菇——褶皺多的，重點刷菌褶

香菇傘蓋下面的褶皺是藏泥沙的重災(zāi)區(qū)，步驟這樣來：

第一步：初步去泥

用干廚房紙或軟毛刷（舊牙刷也行），輕輕把菌蓋表面浮土掃掉。根部帶硬木屑的部分，直接用刀削掉1～1.5厘米。

第二步：快速沖洗或短時浸泡

特別臟的，可用淡鹽水（500毫升水加5克鹽）泡3～5分鐘，幫助蟲卵脫離。時間別超10分鐘！ 然后菌褶朝下放在流動水下，手指輕搓傘褶，讓泥沙隨水流沖走。

第三步：吸干水分

撈起后立刻用廚房紙按干表面水分，再切片或切塊下鍋。

小竅門：講究點的可用一勺面粉+少量水輕揉再沖，面粉吸附藏縫里的細沙，但沖干凈別留粉味。

三、平菇/秀珍菇——撕小朵再洗

平菇不像香菇有深褶，但根部常裹著培養(yǎng)料殘渣：

1. 先去根：掰掉底部硬根和發(fā)黃部分。

2. 撕小朵：順著菌蓋撕成一口大小——先撕再洗，別先洗完再撕（切面會進水）。

3. 快速沖洗：放漏盆里用流動水快速沖，或淡鹽水泡2～3分鐘再沖凈。

4. 充分瀝干：用手輕擠（別使勁攥），鋪廚房紙吸干再炒，不然下鍋變燉菇。

四、金針菇/白玉菇/蟹味菇——切根快沖

這類工廠化種植的菇相對干凈：

- 切掉根部約1～2厘米（發(fā)黃、粘連培養(yǎng)基的全切掉）。

- 稍稍掰散，流動水下快速沖10～15秒。

- 撈起甩掉多余水，用廚房紙吸一下就好。

五、杏鮑菇/口蘑——擦一擦就行

表面光滑、無明顯深褶：

- 用微濕廚房紙把表面泥點擦干凈即可。

- 特別臟再快速沖一下，絕不浸泡。

- 切去根部，按菜譜切片或切條。

六、幾個容易忽略的細節(jié)

- 要不要焯水？ 一般鮮菇不用。若做涼拌或介意農(nóng)殘，沸水加幾滴白醋焯10～20秒立刻過涼水，但會有少量鮮味流失。

- 洗完盡快做：蘑菇含多酚氧化酶，切開接觸空氣易氧化變黑，洗好建議半小時內(nèi)下鍋。
