菠菜洗凈，拍幾瓣蒜，下鍋扒拉兩下，出鍋。誰都會(huì)做。

但你做出來的菠菜是不是這樣的：黑乎乎一團(tuán)，軟塌塌趴在盤子里，盤底汪著一灘綠色的水，吃起來一股澀味，蒜香也沒了。

再看看飯店里的蒜蓉炒菠菜：碧綠油亮，根根分明，蒜香撲鼻，吃一口鮮嫩爽滑。同樣是菠菜，差距咋就這么大呢？

其實(shí)就差幾個(gè)小步驟。今天我把一個(gè)干了二十年粵菜的老師傅教的秘訣全部抖出來，保證你看完就能做出飯店水平的蒜蓉炒菠菜。

一、選菠菜，有講究

先說怎么挑菠菜。市場(chǎng)上的菠菜分兩種：圓葉的和尖葉的。

圓葉菠菜：葉片肥厚，水分足，口感偏軟糯，適合做湯或者上湯菠菜。

尖葉菠菜：葉片薄，莖稈長(zhǎng)，口感脆嫩，最適合清炒。我們今天做的就是這種。

買的時(shí)候挑顏色深綠、葉片完整、根部不發(fā)黃的。那種葉子發(fā)黃、蔫了吧唧的就別買了，炒出來一股爛菜味。

買回來之后，處理也很關(guān)鍵。菠菜根部容易藏泥，一定要仔細(xì)清洗。我的方法是：切掉根部一小截，然后把菠菜泡在淡鹽水里十分鐘，再?zèng)_洗兩遍，保證干干凈凈。

二、焯水還是直接炒？答案在這里

這個(gè)問題爭(zhēng)議很大。有人說菠菜必須焯水，去除草酸；有人說焯水了就不香了。

我的答案是：必須焯水，但有技巧。

菠菜里的草酸含量很高，不焯水的話吃起來會(huì)有股澀味，而且草酸會(huì)影響鈣的吸收。但焯水焯不好，菠菜就變成一灘爛泥了。

正確做法：

燒一鍋水，水開后加一勺鹽和幾滴食用油。鹽能給菠菜入個(gè)底味，油能讓菠菜保持翠綠。

把菠菜放進(jìn)去，用筷子快速撥散，心里默數(shù)10秒鐘，最多15秒，馬上撈出來。千萬別超過20秒，不然就過火了。

撈出來的菠菜立刻放進(jìn)冰水里過涼（沒有冰水就用涼水多沖幾遍）。這一步叫“過冷河”，能讓菠菜瞬間降溫，鎖住翠綠色澤和爽脆口感。

過涼之后撈出來，輕輕擠一下水分，但別擠太干，留一點(diǎn)點(diǎn)水分反而好炒。

三、蒜的處理，決定成敗

蒜蓉炒菠菜，蒜是靈魂。但很多人處理蒜的方式不對(duì)。

別用刀拍！一拍就扁了，蒜汁都流出來了，下鍋一炒就糊，發(fā)苦。

正確的做法是：用刀切成蒜末。先切片，再切絲，最后切成細(xì)末。切得越細(xì)越好，這樣蒜香能更好地附著在菠菜上。

蒜的量也要夠。一把菠菜，至少用四五瓣蒜，喜歡吃蒜的可以加到七八瓣。別心疼，蒜蓉炒菠菜，蒜少了就沒靈魂了。

另外再備一點(diǎn)點(diǎn)姜末，不用多，小指甲蓋那么大就行。姜能去菠菜的土腥味，但別放多了，搶了蒜的風(fēng)頭。

四、炒的過程，火候是王道

準(zhǔn)備工作做好，接下來就是見證奇跡的時(shí)刻。

鍋燒熱，倒油。油的量要比平時(shí)炒菜多一點(diǎn)，菠菜吸油，油少了不好吃。

油熱后，先放入蒜末和姜末，小火煸炒。注意是小火！火大了蒜末一下就糊了。炒到蒜末微微發(fā)黃、香味飄出來就可以了。

這時(shí)候轉(zhuǎn)大火，放入焯好水的菠菜。只聽“滋啦”一聲，鍋氣就上來了。

快速翻炒，讓每一片菠菜都裹上蒜油。炒的時(shí)間很短，大概30秒到1分鐘就夠了。菠菜本來就已經(jīng)焯過水，基本熟了，炒太久就老了。

沿著鍋邊淋入一勺生抽、少許鹽（因?yàn)殪趟畷r(shí)已經(jīng)加了鹽，這里少放點(diǎn)）、一點(diǎn)點(diǎn)白糖提鮮。快速翻炒均勻。

最后，最關(guān)鍵的一步——勾一點(diǎn)點(diǎn)薄芡。小半碗水加半勺淀粉攪勻，沿著鍋邊淋入，快速翻拌幾下。芡汁能讓調(diào)料更好地掛在菠菜上，吃起來更有味道。但千萬別多，薄薄一層就夠了，多了就變成漿糊了。

出鍋前淋幾滴香油，增香提亮。搞定！

蒜蓉菠菜炒蝦仁：蝦仁用料酒和胡椒粉腌一下，先炒熟盛出來，最后和菠菜一起翻炒。葷素搭配，營(yíng)養(yǎng)更全面。
