在中華美食的浩瀚星空中，鹽菜扣肉宛如一顆璀璨的明珠，以其獨特的風味和深厚的文化底蘊，深受廣大食客的喜愛。這道菜不僅口感酥爛、肥而不膩，更將鹽菜的咸香與扣肉的醇厚完美融合，是傳統與美味的經典之作。今天，就讓我們一同揭開鹽菜扣肉最正宗做法的神秘面紗。

食材準備

- 扣肉坯：選用600克優質的五花肉，五花肉肥瘦相間，是制作扣肉的絕佳選擇，能保證口感的豐富層次。

- 鹽菜：50克鹽菜是這道菜的靈魂所在。鹽菜一般選用青菜即葉用芥菜，取其嫩葉及尖，除去筋膜，洗凈后掛在蔑繩上晾曬三天后取下，置大木盆內，加鹽揉搓至出汁并加入花椒、八角、桂皮等香料拌勻后（也可不加香料），裝入麻袋用石磨壓住，先腌漬七天，取出來再曬一天，入籠蒸透后還得晾干，如此曬蒸揉兩遍后，以數棵菜纏為1把，裝入倒伏罐中（一種口朝下、底朝天的專用壇子），壇口用鮮菜蓋上，再用干稻草塞緊，倒置于水盆中，發酵半個月后，即可開封使用。

- 其他調料：適量干紅椒、辣椒末、八角粉、老干媽、老抽、蠔油、味精、米酒和鹽。

制作步驟

處理扣肉坯

將扣肉坯改薄至二指厚，再切成半指厚的片狀，用溫水清洗去血水和雜質。這一步能去除肉中的腥味，為后續的腌制和烹飪打下良好基礎。

腌制肉片

把切好的肉片放入容器中，加入鹽、老抽、蠔油、米酒、味精、八角粉和辣椒末，充分拌勻，腌制入味。腌制的時間可以根據個人喜好和實際情況適當調整，但一般建議腌制30分鐘至1小時，讓調料充分滲透到肉片中。

準備配料

將干紅椒切碎備用。同時，鹽菜用溫水泡發洗干凈，擠干水分摘開一片片，切碎。

炒制鹽菜
