經典紅燒茄子

食材準備

茄子 1 條、油適量、鹽適量、蒜適量、蔥適量、姜適量、陳醋適量、糖適量、醬油適量、料酒適量、水淀粉適量。

制作步驟

1. 前期準備：將蔥、姜、蒜切末備用。取一小碗，加入一勺生抽、一勺陳醋、一勺料酒、半勺糖和適量鹽，調成碗汁。

2. 處理茄子：把茄子切成滾刀塊，放入放了淡鹽水的盆中浸泡約二十分鐘。這樣做既能防止茄子氧化變黑，又能讓經過淡鹽水泡的茄子在油炸時不吸油。浸泡好后，將茄子撈出瀝水，再用廚房紙吸凈表層水份。

3. 炸制茄子：鍋中倒入適量油，燒熱后加入茄子炸至略軟撈出。接著，將鍋中的油再次燒熱，把茄子入油鍋復炸一次，這樣能使茄子更加外酥里嫩。

4. 炒制調味：將炸茄子的油全部倒出，只留一點點油在鍋中，放入蔥姜蒜炒香。然后加入調好的碗汁，大火燒開。把炸好的茄子放入湯汁中快速翻炒，炒至湯汁略盡，達到自己喜歡的濃稠程度時，加入水淀粉收汁，關火即可。

1. 調糊掛糊：把茄子切成塊，建議選用長茄子，口感比較嫩。將 20 克淀粉、50 克面粉和 1 個雞蛋混合，再加一點點鹽，攪拌成糊后把茄子放進去掛糊。

2. 油炸茄子：鍋中倒入油，油熱之后放入掛好糊的茄子進行油炸，炸好后出鍋。

3. 炒制配菜：將西紅柿切成小塊，越小越好；蔥和蒜也切好備用。鍋中倒入少量油，油熱后將蔥和蒜放入翻炒，炒香后放入西紅柿繼續翻炒。

4. 燒制茄子：把炸好的茄子倒入鍋中，與西紅柿一起翻炒，加入鹽、糖、生抽調味，翻炒均勻即可。
