- 干辣椒 8 個

- 香葉少許

- 八角少許

- 花椒少許

- 白糖 1 勺

- 生抽 1 勺

- 豬肉：五花肉肥瘦相間，燉煮后口感鮮嫩多汁，肥而不膩，瘦而不柴。挑選時，要選擇色澤紅潤、脂肪潔白、紋理清晰的五花肉。

做法步驟

前期處理

1. 將五花肉切成方形塊。鍋中水燒開，放入五花肉，加入白酒以去除腥味，煮 1 分鐘左右后撈出，瀝干水分。

2. 把大蒜切丁，生姜切片，準備好干辣椒、花椒、八角和香葉。同時，將白蘿卜去皮，切成滾刀塊備用。

炒制調(diào)味

1. 在鍋里放一點油，加入一勺白糖，小火翻炒。待白糖完全融化，顏色變成焦糖色時，將五花肉放入鍋中翻炒，直至表面呈現(xiàn)金黃色。

2. 加入大蒜、姜片和準備好的大料（干辣椒、花椒、八角、香葉），繼續(xù)翻炒出香味。

3. 接著加入鹽和生抽，攪拌均勻，讓五花肉充分吸收調(diào)料的味道。

燉煮入味

1. 往鍋中加入一碗水，水量剛好淹沒五花肉即可。然后將五花肉和湯汁一起倒入電壓力鍋中。
