臘豬腳的多種美味做法

- 傳統(tǒng)燉臘豬腳

1. 前期處理

- 選料：選用新鮮的豬腳，優(yōu)先選擇農(nóng)家或者綠色無公害農(nóng)產(chǎn)品市場里購買的豬腳。

- 洗滌處理：將豬腳洗凈，尤其蹄部要清洗干凈，可在熱水中焯水或者加生姜煮水10分鐘，去除異味和血水。

- 泡發(fā)（可選）：如果臘豬腳比較咸，可以提前半天泡水，既能去鹽還能防止燒毛的時候皮裂開，泡好后洗凈斬塊，再用熱水仔細(xì)清洗一遍。

2. 烹飪過程

- 準(zhǔn)備輔料：根據(jù)個人口味準(zhǔn)備適量的調(diào)料，如大料、桂皮、陳皮、花椒、生姜、蔥、蒜、白酒、雞精、紅燒醬油、老抽、生抽等，還可以準(zhǔn)備些配菜如蓮藕、干貝、花菇、姜片、蔥段、鹽、醬油等（臘豬腳本身較咸，鹽可適量少放或不放）。

- 臘豬腳處理：臘豬蹄提前泡好洗干凈斬塊，再用熱水仔細(xì)清洗干凈，然后焯水沖干凈；可以將臘豬蹄燒毛后，用刀把皮刮一遍洗凈，鋸子將豬蹄鋸小或者刀剁小。
