糖醋荷包蛋

食材雞蛋6個，蔥蒜適量，淀粉1勺，生抽

2勺，陳醋2勺，白糖1勺，鹽半勺，

番茄醬2勺。

做法1、準備好所有食材，蔥蒜切末。

2、調一份糖醋汁：2勺生抽＋2勺陳醋＋1勺糖＋半勺鹽＋2勺番茄醬＋1勺淀粉＋半碗水攪拌均勻備用。

3、鍋中刷一層油，放入雞蛋，按自己喜歡的成熟度煎好盛出。

4、鍋中爆香蒜末，倒入糖醋汁，加入雞蛋，小火燜1分鐘大火收汁，撒蔥花即可。

麻辣茭白

做法：1、將茭白的老根、老皮去掉，對剖成兩半，用刀拍松，切成1寸左右長的條狀；干辣椒剪成段。

2、鍋中放入足夠多的油（能將茭白沒過），燒至6成熱的時候，放入茭白炸透，撈出用廚房紙吸干油分待用。

3、鍋中留1湯匙（15ml）的油，放入干辣椒和花椒炸香。

4、放入炸過的茭白炒勻，放入醬油、糖、鹽炒勻。

5、倒入小半碗水燒開，加蓋燜幾分鐘，待水分收干即可。

洋蔥炒牛肉

做法：1.牛肉切片，用適量鹽、醬油、生粉腌制片刻，也可用雞蛋清腌制，更嫩

2.牛肉倒入沸水中，燙過后撈出

3.鍋中注入適量油，炸一下牛肉，撈出

4.熱鍋涼油，爆香蒜末

5.倒入洋蔥、胡蘿卜片，炒勻

6.倒入青椒，放鹽，炒勻，倒入牛肉，調入雞精、胡椒粉、蠔油、生抽炒勻

7.放入蔥和辣椒醬，炒勻至熟即可

韭黃炒肚絲

食材：150克 韭黃、200克 熟豬肚、15克 紅椒絲、3克 鹽、 料酒、生抽、蠔油、雞粉、水淀粉、食用油

做法：

1 、將洗凈的韭黃切成4厘米長段。

2 、豬肚切成塊，再切成絲。

3、 鍋置旺火，注油燒熱，倒入肚絲。

4、 加入料酒翻炒香去除腥味。

5、 加入生抽、蠔油炒勻。

6、 倒入洗凈切好的韭黃。

7 、加入切好的紅椒絲。

8、 加入鹽、雞粉，翻炒至熟。

9、 加入水淀粉勾芡。

10 、再翻炒片刻至入味。

11 、將做好的菜盛入盤內即可。

家常燒魚

材料：鯧魚、生姜、生抽、老抽、蒜、紅辣椒、蔥、香菜、料酒、鹽

做法1.鯧魚去內臟洗干凈，兩面劃上幾刀。

2.將鯧魚撒上面粉，抖去多余的面粉。

3.炒鍋燒熱，倒入油，燒至7成熱，將鯧魚放入，煎至兩面金黃，放入姜、蒜煎一下。

4.倒入生抽、老抽、料酒。

5.加入適量水沒過魚身的三分之二，開小火燒四分鐘左右，加入少許鹽、蔥、紅辣椒繼續(xù)燜煮

6.煮至湯汁濃稠，放入香菜點綴即可。

小葉野山芹豬肉餡水餃

食材清單

高筋粉 300g、小葉野山芹 1把、瘦豬肉 300g、紫薯粉 適量、油 適量、鹽 適量、五香粉 適量、蔥 適量、生抽 適量、料酒 適量、蘑菇粉 適量、蠔油 適量

烹飪步驟

步驟1、將面粉一分為二，一半加入適量的水，和成面團揉勻，另一半加入適量的紫薯粉、適量的水和成面團揉勻，蓋上保鮮膜餳著。

步驟2、開始準備餡料。瘦豬肉洗凈切碎剁成肉餡，大蔥去皮洗凈切碎，可以多放點大蔥提味。

步驟3、肉餡中分多次加入老湯沿一個方向攪拌均勻（沒有可加少許水），讓肉餡充分吸收老湯的汁液，再加入鹽、油、蔥、五香粉、生抽、蘑菇粉、少許料酒、蠔油拌勻。

步驟4、小葉野芹菜摘洗干凈。

步驟5、鍋中加入適量的水，水開下入小葉野芹菜焯水，顏色變深綠撈出過冷水，攥掉水分。

步驟6、將焯過水并攥掉水分的小葉野芹菜切碎，這菜很嫩，切碎就好了。

步驟7、加入到肉餡中攪拌均勻，如果感覺餃子餡有點稀可以放入冰箱冷藏，包餃子時凝固得特別好包，吃的時候會充滿湯汁。

步驟8、包餃子，面團揉成長條，切成均勻的小面劑子，搟成餃子皮，包上餡兩手對捏就好了，非常簡單人人都會包。

步驟、包好所有的餃子，一鍋煮不下可以分兩鍋煮。

步驟10、煮餃子：這種煮餃子的方法簡單好用，朋友們可以試試，水開后餃子入鍋，再次翻開后點入冷水，第二次翻開再點入冷水，第三次翻開即可出鍋，餃子煮的恰到好處。

步驟11、出鍋裝盤，非常美味的小葉野芹菜餡餃子端上桌，清香爽口，好吃不膩，全家人都愛吃。

小貼士

1、面團最好提前和好餳著，這樣的面團好用，包出來餃子光滑。可以不用搭配紫薯粉，我最初想蒸包子了，搭配紫色會很漂亮。 2、煮餃子，水開后餃子入鍋，第一次翻開后點入冷水，第二次翻開再次點入冷水，第三次翻開即可出鍋，餃子煮的恰到好處。

花肉炒腐竹

食材：五花肉300克、腐竹150克、姜4片、蔥4棵、蒜4瓣、干辣椒4個、生抽兩勺、老抽半勺、豆瓣醬1勺、鹽1克、雞粉2克

做法：

1、大盆中加一勺鹽和適量溫水，放入腐竹泡25分鐘。

2、五花肉切薄片。

3、姜、蒜切片、蔥切段、干辣椒切段。

4、泡發(fā)的腐竹擠干水份后切段。

5、鍋內熱油，下五花肉小火煸炒。

6、炒至五花肉出油表面微黃時，加入姜、蒜、干辣椒炒香。

7、再加入一勺豆瓣醬翻炒。

8、調入適量生抽、老抽炒上色。

9、將腐竹放入鍋中翻炒幾下，加適量清水上蓋燜三四分鐘。

10、最后放入蔥段，調入適量雞粉，即可

回鍋牛肉

食材：牛肉250g，淀粉30g，面粉20g，嫩肉粉3g，蛋1個，青椒半個，紅椒半個，鹽3g，胡椒粉1g，雞精3g，姜汁水15g，料酒10g，姜蒜5g，油適量

做法：

1、青椒、紅椒洗凈切塊，將牛肉剁成茸加淀粉，面粉，嫩肉粉，少許鹽，胡椒粉，雞精，料酒，姜汁水，蛋青攪拌成茸搟成半厘米厚片切成長方形快

2、鍋加油燒6-7成熱，將牛肉片下鍋炸至淺黃色撈出

3、鍋下油燒熱，放姜蒜片、青椒、紅椒炒香后下木耳炒至斷生，下牛肉片炒勻，下料酒，鹽，胡椒粉，雞精調好味即可

番茄炒豆腐

材料：番茄一個，豆腐一塊，毛豆一小把，鹽，番茄醬。

做法：

1、取出適量番茄醬放入小碗中，加少許清水稀釋。

2、將豆腐切塊，番茄切滾刀塊。

3、毛豆腐解凍洗凈備用，把豆腐和毛豆分別在沸水中焯燙。

4、炒鍋倒入適量油，燒熱，放入姜和蒜片爆香，再放番茄塊翻炒。

5、放入豆腐炒熟后，放入豌豆和番茄醬汁、鹽、炒勻即可出鍋

青椒炒臘肉

做法： 1.準備好青椒臘肉臘腸等原料。

2.將臘肉臘腸切片待用。青椒，紅椒切塊。

3.起油鍋，爆香蒜頭，將臘味入鍋炒至透亮。

4.加入青紅椒一起煸炒。

5.鹽鍋邊溜點清水（一點點））加鹽，生抽調味。

6.炒至青椒斷青就可以盛起上桌了

花椒魚片

材料：魚身肉、金針菇適量、干尖椒，花椒、鹽、生抽、雞精、淀粉、雞蛋、姜絲

做法：

1.將魚身，切成薄片，加鹽、生抽、雞精、淀粉及一只雞蛋拌勻，腌15-30分鐘。

2.將金針菇燙熟，取出后置于湯碗內。

3.放入清湯，加鹽，姜絲，雞精調味。待湯沸后，放入腌制好的魚片。九成熟連湯盛入已墊有金針菇的湯碗內。

4.放油入鍋，稍熱就加干尖椒，翻炒幾下，再加入花椒，同樣翻炒幾下即可

麻婆豆腐

用料：大豆腐，瘦肉末，小蔥，郫縣豆瓣醬，花椒，大蒜，鹽，雞精，淀粉

做法：

1.豆腐切小塊，瘦肉剁成肉末，蔥白切段，綠葉部分切蔥花，蒜切末。

2.鍋中添水把豆腐放進去小火煮一會兒，撈出備用。

3.鍋中放油燒熱后放入花椒小火慢炒，再放入蔥段爆香。

4.放入肉沫炒至變白。

5.放入豆瓣醬翻炒均勻。

6.添水差不多將蓋過肉末，小火燉煮一會。

7.放入豆腐小火燉煮，讓味道滲入豆腐中放少量鹽，因為豆瓣醬有咸度。

8.待湯汁差不多時放入蔥花和蒜末，再調入淀粉芡汁，輕輕翻炒均勻，盛出裝盤。

小炒圓白菜

材料：圓白菜半棵、西紅柿2個、豆腐干5片、火腿1片、蔥姜末各1茶匙、醬油1湯匙、五香粉1/2茶匙、鹽1/2茶匙、糖1/2茶匙。

做法：

1、將圓白菜先摘成片，洗凈后瀝干，用手撕成小塊。西紅柿洗凈切塊。火腿切片。豆腐干切塊。姜蔥切末。

2、鍋中加入油，待油7成熱時，放入蔥姜末爆香后，放入豆腐干，不要用鏟子翻動。約半分鐘，聽到豆腐干發(fā)出“滋滋”聲后，用鏟子翻動，再用油煎一下另一面。這樣，豆腐干比較香，也不容易碎。

3、豆腐干煎膨松后，加入醬油和五香粉，再放入圓白菜，炒到稍軟后，加鹽和糖。倒入西紅柿和火腿片，炒至西紅柿稍出湯后即可關火。

雞胗土豆球

食材：雞胗200g、土豆球200g、油適量、鹽適量、尖椒適量、蔥姜適量、醬油半勺、蠔油1勺、糖2g、花椒油少許、大料1顆、老抽適量、料酒1勺

做法：

1、雞胗泡洗干凈。2)在雞胗上劃出花刀。

3、劃好的雞胗再用清水泡洗出血水。

4、鍋中放清水，把雞胗焯燙。

5、換清水，加入老抽，料酒，大料把雞胗煮十多分鐘去腥上色。

6、撈出備用。7)土豆球解凍。8)抖上干淀粉。

9、下油鍋炸至金黃。10)炸好的土豆球控油。

11、鍋中留底油，下蔥姜炒香后加入雞珍和土豆

12、加入蠔油，醬油，鹽，花椒油，尖椒片炒勻。

13、點水淀粉，點明油出鍋。

溜小油菜

食材：小油菜 、鹽、醬油、醋、水淀粉、姜、蔥、花椒油。

做法：1、將小油菜清洗干凈，切段裝盤待用，熱鍋放油，爆香蔥姜末。

2、倒入小油菜煸炒，放入精鹽，醋，醬油。

3、翻炒均勻后，用水淀粉勾芡，淋入花椒油，出鍋，裝盤即可。

芹菜蝦仁

做法：1、用水將芹菜洗干凈，再切成片狀，然后打一盤熱水并倒入一些鹽

2、將蝦仁放進去過一遍后取出來，用冷水沖洗一遍。

3、將處理好的食材放在一起，加適量調料，攪拌后就可以食用了。

姜汁菠菜

材料：菠菜，姜1小塊，生抽，芝麻油，白砂糖少量，鹽少量，雞粉。
