夏季吃魚(yú)，大家沒(méi)有必要總是盯著鯽魚(yú)、鱸魚(yú)。這個(gè)時(shí)節(jié)這兩種魚(yú)，不僅魚(yú)肉薄，而且價(jià)格還居高不下。今天給大家分享3種品質(zhì)更佳的魚(yú)，味道比鯽魚(yú)鮮，比鱸魚(yú)有營(yíng)養(yǎng)，雖說(shuō)價(jià)位偏高，但鮮味足、營(yíng)養(yǎng)也更出眾。夏季每天換著吃，能補(bǔ)足營(yíng)養(yǎng)、增強(qiáng)體質(zhì)，輕松度過(guò)苦夏。

夏季最鮮美魚(yú)：鱔魚(yú)

不喜歡吃鱔魚(yú)的人，看著它就惡心，喜歡吃鱔魚(yú)的，會(huì)把它當(dāng)做寶貝，大部分人還是喜歡吃鱔魚(yú)的，鱔魚(yú)雖然是在淤泥里面生長(zhǎng)的，但是鱔魚(yú)是特別鮮美的雨，在長(zhǎng)三角區(qū)域，帶著鱔魚(yú)菜，至少70元一盤(pán)，雖然價(jià)格貴，但是不管怎么做，味道都是很鮮美的。

最下飯的新吃法：泡椒鱔魚(yú)段

吃鱔魚(yú)，需要味道重一點(diǎn)，要么吃酸味，要么吃辣味，而泡椒鱔魚(yú)段，又酸又辣，偶然的一次靈感，做了這道菜，深受加熱的喜愛(ài)，鱔魚(yú)段徹底吸收了泡椒的味道，使得蒜段特入味。

【要想做出那個(gè)味，食材得這么配】：鱔魚(yú)1斤、蒜薹50克、泡椒80克、蒜籽、生姜、食鹽、淀粉、花椒、干辣椒、蔥段、食用、花椒油適量。

第一步：鱔魚(yú)處理干凈后，斜著切成片，鱔魚(yú)可以去骨也可以不去骨，根據(jù)自己喜愛(ài)，鱔魚(yú)處理好后，沖洗干凈，徹底去除腥味。

第二步：把鱔魚(yú)片放入盆中，加入少許、淀粉、油，將鱔魚(yú)拌勻后腌制10分鐘，使鱔魚(yú)提前入點(diǎn)底味。

第三步：放一勺花生油到鍋中燒熱，然后把切好泡椒、蒜籽、老姜放入鍋中炒3分鐘，再將適量熱水放入鍋中，大火將它們煮5分鐘，將泡椒中的酸辣味徹底煮出來(lái)。

第四步：趁著湯汁在咕嚕，將鱔魚(yú)片、蒜薹段放入鍋中，大火煮1分鐘后，等鱔魚(yú)片定型后，再慢慢翻動(dòng)，繼續(xù)煮2-3分鐘就可以起鍋了。

第五步：鱔魚(yú)表面撒上少許花椒、干辣椒、蔥段，最后淋上一勺燒熱的豬油，激發(fā)出它們香味就可以開(kāi)吃了。

夏季肉質(zhì)最嫩的魚(yú)：黃鴨叫

黃鴨叫也被稱(chēng)為黃骨魚(yú)、黃辣丁、黃桑魚(yú)等等，因?yàn)樗慕新暠容^像鴨子，因此而得名，黃鴨叫的肉質(zhì)特比細(xì)膩、白凈，幾乎沒(méi)有腥味，水中越好的魚(yú)，黃鴨叫越嫩，對(duì)于一些不愛(ài)挑刺的人來(lái)說(shuō)，夏季的黃鴨叫最適合吃，特別是用它燉湯或者用辣椒燒著吃，真的是一絕！

解饞的吃法：豆豉黃鴨叫

一些人吃黃鴨叫，都是燉湯喝，燉的奶白的湯，喝著特別鮮美，而今天我分享的黃鴨叫吃法，是豆豉黃鴨叫，豆豉的鮮味和黃鴨叫的鮮味結(jié)合在一起，使這道菜鮮上加鮮，相比較煮湯，這樣吃會(huì)更入味一點(diǎn)，在夏天吃，會(huì)更喜愛(ài)。

做這道菜，這幾樣食材不能少：大黃鴨叫3-5個(gè)、豆豉、生抽、姜末、淀粉、胡椒粉、食鹽、食用油、蔥花。

①黃鴨叫扯開(kāi)后，把里面血水和內(nèi)臟都要徹底去除，再把黃鴨叫沖洗干凈后瀝干水。

②黃鴨叫放到砧板上剁成塊，豆豉、生抽、姜末、食鹽、胡椒粉放入黃鴨叫中抓拌均勻，然后撒上一把玉米淀粉再次抓拌均勻

③將拌好的黃鴨叫放到蒸鍋中，將蒸鍋燒的冒熱氣后，繼續(xù)大火蒸10分鐘。

④立即揭開(kāi)鍋蓋，再淋少許蒸魚(yú)豉油，撒上一點(diǎn)點(diǎn)蔥花、淋一勺熱油就可以吃了，趁熱吃最香。

夏季最補(bǔ)的魚(yú)：烏魚(yú)

烏魚(yú)也被稱(chēng)為黑魚(yú)，在我們當(dāng)?shù)兀募镜臑豸~(yú)是受很多人喜愛(ài)的，它不僅肉質(zhì)細(xì)膩，更重要的是它含有的蛋白質(zhì)比較高，在夏天多吃一些蛋白質(zhì)高的魚(yú)肉，可以為身體補(bǔ)足營(yíng)養(yǎng)，像一些孕婦、做完手術(shù)的人或體質(zhì)差的小孩，都可以適當(dāng)?shù)亩喑渣c(diǎn)烏魚(yú)，補(bǔ)補(bǔ)身體。

1、買(mǎi)烏魚(yú)時(shí)，讓魚(yú)販子幫您把魚(yú)處理好，您說(shuō)把魚(yú)切成做酸菜魚(yú)的片就可以了，喜歡吃皮的可以留皮，不愛(ài)吃的可以去皮再切片。

2、烏魚(yú)片洗凈后瀝干水，再把一把淀粉、食鹽、一小勺油放入魚(yú)片中拌勻，再把娃娃菜洗凈備用。

3、鍋中放入冷水，將水燒熱后，先把娃娃菜放入鍋中燙1分鐘后撈出，再次把水燒沸后，立即將烏魚(yú)片放入鍋中煮一會(huì)兒，直到烏魚(yú)片發(fā)卷，就立即撈出。

4、先把娃娃菜放入盤(pán)底，再把躺好的烏魚(yú)片放入娃娃菜上，然后撒上花椒、蔥絲、淋上陳醋，最后再淋一勺熱油，激發(fā)花椒和蔥絲香味就可以吃了，這道菜放涼了，口感也很好。
