地處福建中部的三明，是一座藏在群山之中的生態山城，青山連綿、綠水環繞，自然風光清幽治愈。依托得天獨厚的山林物產與客家民俗底蘊，三明孕育出獨樹一幟的閩中山城風味，小吃種類繁多，煙火氣十足。這里沒有重油重辣的厚重口感，大多美食清鮮質樸、原汁原味，滿是客家飲食的淳樸匠心。今天就盤點三明六大必吃特色美食，地道本地人從小吃到大，打卡過半，才算真正讀懂三明的煙火味道。

一、永安粿條

永安粿條是三明永安的城市美食名片，也是閩中早餐界的天花板，深耕本地街巷百年，是無數永安人每日離不開的一口鮮。區別于普通米粉河粉，永安粿條選用優質大米古法研磨蒸制，質地細膩軟糯，入口順滑無渣，同時又自帶恰到好處的韌勁，口感爽滑筋道。

一碗正宗粿條，靈魂全在慢熬數小時的筒骨高湯，湯色清亮鮮甜，不加過多添加劑，還原食材本身鮮味。上桌后鋪上鮮嫩活肉、脆嫩套腸，撒上蔥花、白胡椒提香，熱湯沖入粿條，熱氣裹挾鮮香撲面而來。粿條吸滿骨湯鮮味，葷料鮮香解膩，湯頭溫潤回甘，清淡卻絕不寡淡，簡單一碗，藏著最治愈的閩中山城煙火。

二、沙縣扁肉

說起沙縣美食，扁肉必然是榜首，也是沙縣小吃走向全國的招牌美味，更是三明客家小吃的經典代表。沙縣扁肉最大的特色，在于純手工捶打的肉餡，師傅反復手工敲打豬肉，打破肉質纖維，不用過多淀粉填充，讓肉餡自帶彈嫩質感。

薄透透亮的面皮裹入緊實肉餡，下鍋沸水快煮片刻即可熟透，出鍋后湯色清澈，面皮輕薄軟糯，肉餡Q彈多汁。一口咬開，鮮嫩肉汁在舌尖迸發，搭配清淡骨湯，鮮香純粹。沒有繁雜調味，依靠食材本身取勝，皮薄餡嫩、湯清味鮮，不管是早餐墊肚子，還是下午茶解饞，都是絕佳選擇。

三、沙縣燒麥

很多人吃過全國各地的燒麥，但唯獨沙縣燒麥風味獨一份，和北方糯米燒麥、廣式干蒸燒麥截然不同，是三明沙縣獨有的特色小吃。沙縣燒麥皮薄如紙，通透晶瑩，肉眼可以清晰看見內里餡料，顏值格外別致。

它最大的亮點是餡料不用肉類，而是以軟糯粉絲為主，搭配少許配菜拌勻制成，一口下去軟糯爽口，清爽不膩。吃沙縣燒麥的標配，必須搭配本地特制豉油，咸香豉油浸透粉絲內餡，鮮味直接翻倍。小巧一顆一口一個，鮮香順滑，清淡適口，是來沙縣必嘗的特色小眾美味。

四、寧化魚生

寧化魚生是三明寧化傳承千年的客家名菜，也是福建知名非遺風味，憑借極致鮮爽的口感，成為閩西極具代表性的生食美食。這道美食對食材、工藝要求極高，全程講究干凈衛生，工序嚴苛且極具講究。

選材必須選用鮮活淡水草魚，先進行放血處理，徹底去除魚肉血水，杜絕腥味，隨后手工切出薄如蟬翼的魚片，魚片通透白凈，紋理完整。吃的時候無需加熱，直接搭配醬油、香油、陳醋、芥末等調味拌勻，入口冰涼脆嫩，魚肉鮮甜無腥，口感清爽極致。這道美食承載著寧化古老的客家飲食習俗，是當地宴席上必不可少的壓軸冷菜。

五、泰寧碧玉卷

碧玉卷是三明泰寧專屬春日小吃，也被當地人叫做韭菜卷，因外皮翠綠如玉，故而得名碧玉卷，滿是山野自然氣息。外皮以新鮮韭菜榨汁，混合米漿調制而成，天然翠綠，色澤清新好看，還帶著淡淡的韭菜清香。

內里填入肉絲、鮮筍、香菇、蘿卜干等家常鮮料，食材均取自本地山野，鮮香十足，包裹成型后下鍋煎至兩面金黃。外皮軟韌帶著韭菜清香，內餡鮮香豐富，一口咬下滿是山野鮮味。對比普通春卷，它多了草本清香，口感更軟潤，是專屬于泰寧的春日限定美味。
