大家是不是經常看到一些補葉酸的文章，很多人一直都有一個疑問，為啥中老年要多吃一些葉酸含量高的食物，如果體內葉酸不足，會出現什么問題？前2年我和大家有一模一樣的疑問，有一次實在是想不通，我就在網上查閱了一些資料，同時在網上問了一位醫生，我才搞清楚，體內缺葉酸，會出現記憶力下降、認知障礙、老年癡呆、心腦血管之類的疾病，雖然這些疾病我們無法徹底避免，但是適當補充一點葉酸，是可以降低發生的概率。

最近2年，我身邊的朋友聽從了我的建議，在日常飲食中，經常吃一些葉酸含量稍微偏高的一點食物，大家發現，記憶力確實沒有降的很快了，而且人都變得比以前多一點精氣神了，所以我們一致認為，在日常中還是要堅持吃一些葉酸含量高的食物。

龍須菜就是葉酸含量很高的一種蔬菜，同等重量下，龍須菜的葉酸含量大概是芹菜的10倍，而且在夏天，一周吃2次龍須菜，還可以潤腸、降火、強免疫，功效很多，但是價格不貴，一般只賣3-4元1斤，買1斤半就可以吃2餐了。6-7月份也是龍須菜最嫩的時候，所以趁著龍須菜很鮮嫩，一定要多吃，特別是在菜場遇到便宜又好看的龍須菜，別錯過了，很多時候猶豫了，就很難再次遇到了。

龍須菜不是我們常吃的南瓜藤，它是佛手瓜的藤，長的沒有南瓜藤粗，葉片也沒有它大，但是吃著更脆，深受大家的喜愛。龍須菜的吃法也很多，就像我分享的3種龍須菜，從炒到拌到湯，都是比較好吃，沒有吃過的，按照我的方法做，可能會符合您的味蕾。

01爽口又解膩|涼拌龍須菜

夏天吃涼拌菜真的很爽口，剛好龍須菜也是可以涼拌的，拌好的龍須菜保留了龍須菜最鮮嫩的口感，特別是干完體力活，身體還很熱，吃一點涼呼呼的龍須菜，不出10分鐘，整個人都清爽了，喜歡口感好，營養豐富的，建議首先龍須菜。

【簡單準備幾種食材】：龍須菜400克、食鹽、蒜末、干辣椒、花椒、白灼汁。

第?步：龍須菜表皮有透明白刺，如果不把它去掉，會嚴重影響龍須菜口感，所以吃龍須菜，需要把皮撕掉，再把須撇掉扔掉，下面2種做法，都是這個方法處理龍須菜，我不再重復介紹。

第?步：剝好的龍須菜撕成段，用流水將龍須菜洗凈，不需要一直洗，龍須菜是很干凈的。

第?步：水燒沸放入龍須菜和3滴油，大火焯水半分鐘撈出，然后過涼水，等它完全冷卻在撈出，同時把龍須菜中的水擠干。

第?步：少許食鹽、白灼汁倒在龍須菜表面拌勻，在鍋中放入一勺油，等油燒的冒煙關火，把蒜末、花椒、干辣椒放入油中炸的微微發黑，淋倒龍須菜表面就可以吃了。

【注意】：我花椒、干辣椒炸的有點糊，是我愛吃糊一點的，你不愛吃，少炸幾秒，或者油不燒的太燙就可以了。

02上湯龍須菜|湯鮮味美

很多蔬菜都可以做上湯之類的菜肴，龍須菜也是的，而龍須菜本身沒有異味，加上它的鮮味還算是比較足，所以用龍須菜做的上湯菜，真的是很鮮，用龍須菜做上湯菜，我喜歡放點臘肉，做好的上湯龍須菜特別鮮，我個人覺得比一些菌菇湯都要鮮美。

咱們先把食材備好：龍須菜200克、咸鴨蛋1個、臘肉50克、皮蛋1個、枸杞、姜末、食鹽。

1、鍋中放入一點油，把剝好1咸鴨蛋、切好的皮蛋、臘肉、將姜末都放入鍋中，小火炒一會兒，聞到很濃烈的香味就可以了，一般炒60-80秒就行。

2、倒入一大碗的熱水在鍋中，蓋上鍋蓋煮3分鐘，再將龍須菜、食鹽放入鍋中煮分把鐘，等龍須菜斷生了，撒上幾顆枸杞就可以飲用。上湯龍須菜要趁熱喝，放涼了，會有少許腥味，我個人不愛喝涼的。

03脆爽香辣|爆炒龍須菜

我個人喜歡吃辣一點的菜，每次做龍須菜，我喜歡給自己炒一盤香辣龍須菜，香香辣辣的，吃在嘴里還特別脆，有時候食欲不好，做了這道菜，都感覺食欲大開呢，特別是在夏天，用它拌米粥，更好吃。炒這道菜有個小秘訣，就是要用豬油炒，其他油炒都沒豬油炒的香。

做這道菜，家里這幾樣不能少：龍須菜、干辣椒、豬油一大勺、蒜瓣、蠔油。

①放一勺油到鍋中，大火把油燒熱后，把蒜瓣、干辣椒放入鍋中炸5秒，立即將龍須菜和一小勺水放入鍋中，大火一直炒，直到把龍須菜炒的焉。

②放一點點食鹽和蠔油到鍋中，然后繼續翻炒七八下就可以起鍋吃了。

【爭議點】：有人說做龍須菜需要焯水，不焯水吃著澀口，我個人吃龍須菜，喜歡直接炒，感覺焯水后再炒，少了一種味道，如果是很老的龍須菜，可能需要焯水，不焯水是吃著真澀口，6月份的龍須菜一般不焯水，7月份可能需要。
