這是一道湘菜創新菜，選用新鮮的豬肚尖為主料，上桌后用高湯過橋浸泡成菜，這便是湯泡肚尖的由來。制作時，把處理好的新鮮豬肚尖打上類似于腰花的魚鱗花刀，用堿面浸泡，以保持脆、白、嫩的口感。泡發口蘑打上梳子花刀，準備鮮嫩油菜心。用足量高湯，調味后把油菜心、泡發口蘑焯熟煨透，再快速把肚尖氽燙成熟。

麻辣仔雞

這是一道最能突出湘菜麻辣特點的經典名菜。它由玉樓東酒家創制于清朝同治年間，以一年內的仔公雞為主料，搭配紅辣椒、花椒爆炒成菜。制作時，取凈雞肉，切成2厘米大小的雞肉丁，調味后上漿，用熱油快速炸熟。另起一鍋，把紅辣椒小片、花椒爆香后，下入炸過的雞肉丁，調味后快速翻炒出鍋。成菜具有外焦里嫩、色澤金黃、麻辣鮮香等口味特點。

發絲牛百葉
